Pumpkin Cream Cheese Muffins
These were awesome. I added a pinch of nutmeg, allspice and clove. I did not do the strusel topping. The key with these is to fill each muffin cup 2/3 of the way with the pumpkin batter than pipe the cream cheese batter into the middle. I just used a ziploc bag and cut the tip off. It worked perfect! Tasted and looked just like the ones at Starbucks! This recipe made 12 Pumpkin cream cheese muffins and 20 plain pumpkin mini muffins. Thanks. I will make these every year!

Chunky Cheesecake Brownies
We made these but didn't add the chocolate chips to the cheesecake batter. This was my first time making brownies from scratch and it was easier than I anticipated. Very rich and Delish!! Thanks! I will make these again for sure!

Cajun Corn and Bacon Maque Choux
This was really good and so easy! Fresh corn is out of season so I used canned corn(but I'm sure frozen would be good too). I chopped the bacon and cooked it in a regular saute pan. I took the bacon out and added the peppers and onions. I added the canned corn and tomatoes at the end. I forgot the milk but I used some cajun seasoning as well as the cayenne pepper. I put the bacon crumbles on top before serving so they would stay crispy. We ate this with ribs and mashed potatoes. Thanks for a good recipe - I can't wait to try it with fresh corn!
