Sloppy Joes II
Made tonight to send with my daughter back to school for a 4th of July party she is having this week. I tripled the recipe with the exception of just doubling the brown sugar. It is still a bit sweet. My suggestion is to put in the regular amount of brown sugar if you are increasing recipe and then add more to your taste. Overall very tasty.

Baked Ziti with Sausage
This was excellent, family loved it! I followed other reviewers and cooked the onion and garlic, removed from pan and then browned the sausage. I did not have ricotta and honestly am not a fan of the gritty texture, so I took about a cup or so of cottage cheese and blended it, added the egg and spices and blended again. Made for a nice and creamy dish. Will make this again and next time try with turkey sausage and some lower fat cheeses. I always use the Dreamfield pasta which is a lower carb pasta, and the family has no idea.

Apple Pie Muffins
These were excellent! Made the recipe as written. Used 2 cups of Honey Crisp Apples and cut into a very small dice. Next time I may leave chunks a bit larger and I think that will enhance the apple flavor. Family loved these muffins. I am also going to try what one reviewer suggested and cut in cold butter for the topping and see what kind of results I get that way.
