Pan-Seared Scallops with Pepper and Onions in Anchovy Oil

This was soooooooooooooo good, and better yet, QUICK & EASY!!! I served it over angel hair pasta tossed in garlic and EVOO...all I can say is...YUMMMMMMMM!!!

This is really REALLY good (GOOD and there is a combo that can't be beat!). I have made it dozens of times! I serve it over a bed of shredded lettuce or lettuce leaves to put the "L" back in the BLT...always a hit!

Caramel Bread Pudding

So EASY & DELISH! The only thing I did different was use some (soft) stuffing cubes I had leftover from the holidays. I did put a few dabs of butter on top and sprinkle the top (VERY sparingly!) with a bit more cinnamon and sugar. It was very sweet, but I intended it for a dessert! Served it warm with some cinnamon ice gobbled it up and thought they were in heaven!

Potato Pork Skillet

This was cannot argue with a "one-pot" meal! For some reason the mushrooms didn't pair well with the pork, I dunno. But I WOULD make it again.

Polish Style Lasagna

This is so easy and so good. We, too, used to call this "lazy pierogies". Add some cabbage to the onions and you got "lazy haluski". Maybe you have to be Polish or grow up in the Coal Region (think BLOCK PARTIES!!!) to appreciate this, but it IS worth trying.

Chicken with Chipotle

This was a base recipe. There is spice from the chipotle, but not a lot of DEPTH of flavor. The next time we made it, we added garlic, chopped onion, and cilantro to the sauce...and seasoned the chicken really well w/ Mexican spices. May still "tinker" with it next time I make it!
