Avocado-Shrimp Salad
This is really tasty! I used only one avocado and a tiny bit of onion and added a bit of cilantro. I made it late last night so the Hubby and I could have it for lunch today. While letting it chill for a bit did wonderful things to the flavor, it was too long for the avocado, which started to turn color and got a bit mushy. The Hubby suggested tossing in some rotini pasta next time.

Mother's Applesauce Cake
This cake is fabulous! It fills the house with the smells of Fall as it's baking. It's a dense, moist cake; kinda heavy after a big meal. I used 1/2 tsp of cloves because I don't like a strong clove taste. I left out the raisins, dates, and walnuts, and the cake was delicious without them, but I think it would be better with them. Also, based on some of the reviews, I sifted powdered sugar on top just before serving instead of using the icing; it was a perfect topping. My kids started begging for another cake as soon as we finished off the first one!

Italian Spaghetti Sauce with Meatballs
I gave this 5 stars after tasting just the meatballs. My young boys are very picky eaters and not only did all 3 of them eat the meatballs (a shock in itself!), but they all wanted seconds and were upset to find none were left (my husband and I had eaten them all). This NEVER happens. I made 2 changes to the original recipe: I used turkey burger instead of ground beef and whole grain Cream of Wheat instead of breadcrumbs (I got the cereal idea from Swedish Meatballs 1 by Jessica). Thanks to other reviewers who mentioned turkey burger gets too dry with breadcrumbs, I used maybe 1/2 cup of cereal instead of 1 cup. I put them in a saucepan with jarred marinara and they were fantastic! No browning, no mess; perfect. Today I'm trying them in the crockpot. I haven't made the sauce yet (did I mention my kids were picky eaters?) but I plan to, and I suspect it will be delicious.
