Chipotle Crusted Pork Tenderloin

4 stars a written. Really easy and tasty. We used regular chili powder so the 2 year could enjoy it too. If you've never used chipotle powder, be warned - it's a little spicy. Made a mango salsa to go with it, but ended up eating the salsa with chips because I didn't want to ruin the flavor of the pork.

Kid-Friendly Wheat Bread

Made the dough in my bread machine (no mixer) and baked in the oven. Success! I had to half it because I didn't realize how low I was on yeast, but I followed the directions exactly and it turned out great. And my 2 year old loves it. Thanks!

ehhh. I was craving some oatmeal cookies and can't have eggs right now...my hopes were a little high. More like a health bar texture than a cookie.

Meatiest Vegetarian Chili From Your Slow Cooker

Excellent - We served alongside some elk chili in a crowd of mostly meat eaters and 2 true vegetarians. There were no leftovers. Made exactly as stated, except in the dutch oven instead of the crock pot. Spices were perfect for my 18 month old daughter - not sure about the reviews that said it was too spicy.

Roasted Curried Chicken with Couscous

I would go 3 1/2 stars. I only made the chicken and used thighs, but followed the recipe exactly. It was okay, but not phenomenal. It may have been my curry powder. I made the full amount of curry mixture, rubbed onto thighs and under the skin and marinated like that for 24 hours. I really expected the flavor to pop, but it didn't. I will try again with a different curry powder.

Teriyaki Flank Steak

This was better than I expected. I didn't add ginger, since I'm not a big fan, but loved the combo of flavors. Got raves from all our friends last night. I scored the flank steak and then let marinade overnight - super tender (esp for flank). If I wanted more of an asian flavor I would add some sesame oil and sesame seeds.

Basil Tomato Soup

Love this recipe - and it makes enough for a week of lunches after a good dinner with crusty bread! I did saute some onions and garlic before adding the tomatoes and broth, but I add onion and garlic to almost everything. Followed another recommendation and got the crushed tomatoes with basil and added some dried basil instead of fresh (I killed my basil plant in a recent move). I also used light cream to cut a little bit of fat, but I don't think it compromised the taste.

Whole Wheat Honey Bread

Thank you! Thank you! Thank you! I can't tell you how long I've been looking for a good whole wheat recipe that tasted and looked good! I did substitute butter for shortening (i didn't have any) and made the basic high altitude adjustments (3TB Gluten, extra 3 TB water, extra tsp of salt and only just shy of 1 1/4 tsp of yeast). Next time I probably will decrease the honey.

Love this recipe! It is one of our standards and easy to adjust for friends who don't like the spicy spice. If you have someone who thinks it is too hot, I would recommend cutting the cayenee to 1/2 tsp.
