About this Cook
I am 36 and a mother of three - ages 23, 21, 13. I know, I am young for having a twenty three year old!! She's my stepdaughter and stepson and I adopted them when we got married, then we had our own together. We lead very busy lives - always chasing after our children. Our oldest has been married almost a year already and we have a senior in college. Our youngest is spoiled being the only child at home. My husband and I have been married for 15 years.
My favorite things to cook
I love to bake desserts! Only thing is my husband and kids don't eat them so I end up eating the whole thing myself! My children would say my favorite thing to cook is chicken. We eat chicken more often than not. And it's different every time.
My favorite family cooking traditions
Well, since my children do not take after their mother in the cooking department we really don't have any family cooking traditions. I cook, they eat - that's a tradition that happens every day. My mother, however handed down a great family tradition - her own cookbook with all of our favorite recipes from when we were children. I use it all the time and I am working on my own cook book to hand on down to my kids.
My cooking triumphs
A friend of mine asked me to make her 2 desserts for a family get together she was having. She told me the reason she needed 2 was because a couple of her family members were diabetic. Do you know how hard it is to make a diabetic dessert?? I had been succesful at making cheesecake before so I thought I would attempt a diabetic version and it turned out awesome!! She said they loved it!!

Sugar Coated Pecans
These were absolutely wonderful!! Instead of using pecan halves, I chopped my pecans and then used them on top of my pumpkin cheesecake and it gave the cheesecake an amazing extra touch!

Cinnamon Rolls III
I made these the night before and took the suggestion of many to put them in the fridge overnight and then set out and bake in the morning. My rolls did not rise like I expected them to. Not sure if this was because I had used regular baking flour and not bread flour. I will try again and use bread flour to see if that was the culprit. I used my own recipe for the cream cheese frosting and the rolls were great!! Will definitely try again!

Oven-Baked Caramel French Toast
Let me start off by saying that I hate reading reviews because no one ever follows the actual recipe. Everyone changes it!! I want to read reviews of the actual recipe and not how people change it. On that note, I decided to make the recipe according to the actual directions. The french toast was okay. I love french toast and this did not make the grade for me. It was not as soggy as some reviewers made it sound. I did, however, broil the toast for the last 5 minutes which made it a little crunchy which was great!! I loved the caramel bottom. I actually served mine upside down so the caramel was on top. I also did not use the extra caramel sauce the recipe called for because there was enough on the bottom of the pan. Not sure that I will try this recipe again.
