Shrimp Fried Rice II

this came out great, I just eyeball the soy and omitted the sesame oil (I was out). I left out the salt and added a little garlic powder and ginger... the whole family loved it!

Macaroni and Cheese with Ground Beef, Salsa and Green Chiles

We loved this!! I halved the recipe (but ended up using the whole box of pasta because the cheese sauce made so much) used 3/4 of salsa, and added in some leftover sliced olives. We were out of chili powder, so I used cumin and garlic powder.

Vegan Brownies

These are soo good. I needed to clean out my fridge and these brownies worked perfect for that. Used 1/2c. oil, 1/2 c. pomegranate apple sauce... 1/2c. coffee & 1/2 Lite chocolate soymilk... Added some dried cranberries to these and they are amazing.

Creamy Blueberry Pie

This came out soo good.. I just used my regular size pie plate & crust, and didn't have any spillage problems. I used 3 cups of frozen wild blueberries (the small ones) and had to let it cook about 15 extra mins to saok up the liquid. Everyone loved it!

Rick's Special Buttercream Frosting

This turned out great...I used a little less sugar (just added until the consistency was right) and used skim milk instead of cream. Held up very well in the 80 degree weather, it got soft but didn't melt.

Sweet Potato Pie I

Ended up using 2 very big sweet potatoes so I think my filling was a little heavier than the original recipe... I used 1/2c. Splenda Brown Sugar blend and added 1 Tbl. flour. This came out great! Even my picky little girl loved it

Best Chicken Ever

I let the chicken soak in the sour cream/ranch seasoning mix for 5 hours. 4 breasts took about 40 mins to cook. My whole family loved it, even the 4 year old ate it (without ketchup I might add). Next time I may bake it on a cookie sheet as the bottom was a little soggy. Didn't use the melted butter either.

Cabbage Sloppy Joes

Used 1 tbl. brown sugar, and no lemon juice or vinegar. Also added a can of tomato paste to try and "cover things up". Didn't fool my 3 year old, who picked out the cabbage, but loved the sauce.

Kathy's Delicious Whole Slow Cooker Chicken

Used a 4.5 lb chicken and let it go 5hrs on low. Was still a little dry, could probably have used 1/2 hr less. Flavor was good though, not overpowering, but not too bland. Will try again with a little tweaking.

Buttery Cooked Carrots

Added a little rosemary to the carrots. Tasted good, but the most of the glaze did slip off the carrots and pool at the bottom of the dish.

Guinness® Corned Beef

Not a fan of Guinness, so I used Harp Lager (made by Guinness, but a little lighter), added a boullion cube, and let it simmer away in my crockpot on Low. Honestly, I couldn't stand the smell most of the time..it just smelled like beer. I was worried. But after about 9hrs or so I pulled it out and it was AMAZING. So tender and flavorful.. THANKS so much!

Seasoned Crackers

Used 2 boxes of crackers (both 12 oz in think) and there was plenty of oil & seasoning. Added a few more sprinkles of dill & garlic and a few shots of hot sauce. Everyone loved them!

Baked Teriyaki Chicken

This was the best chicken I have ever made! I double the sauce (using 1/2c sugar and 1/2 splenda) and added an extra clove of garlic. So tender and flavorful, my family was asking for it again the next day!

Cranberry Bars

I added a little extra oatmeal and some whole berry cranberry sauce (leftover from supper) to the fresh cranberries. As long as you let the completely cool, you should have no problem cutting/removing them. Everyone loved them!

Cottage Cheese Chicken Enchiladas

we loved these! I added a can of black beans to the chicken mixture and layered the ingredients like a lasagna (less time than rolling). We used fat free cottgae cheese, S.C, and 75% less fat cheese. Thanks for this recipe!
