Antipasto Salad Platter

This turned out wonderfully! A very simple salad, with healthy ingredients. I made a slightly larger version and used spicy pepperoni as I already had some on hand. Great recipe!!! The only change I might make would be to use a light Italian dressing or something along those lines as the balsamic made the lettuce darker than I would have liked it to look. I made mine in a clear bowl as my platters were already in use. Next time I will be sure to put it on the platter as I think it would look nicer.

Curried Peanut Chicken

I really wish that I had everything on hand to make this dish, but I had almost everything, so I made a version of it. The ingredients I was missing were the coconut and the currants, so there was zero sweet. The marinade was excellent! Since I was missing the sweet already I decided to make a spicier version and added very thinly sliced fresh jalapeno, baked the chicken, and served with rice pilaf/ orzo and fresh basil. This turned out fantastic. Thank you so much and I can't wait to try it again with the currants and coconut!

Kalamata Olive Tapenade

Cucumber Sandwiches I

This was a good recipe, but I still felt like it didn't have quite enough flavor. I felt that the rye sort of overpowered the cream cheese and dressing. I simply added about 1 1/2 times the recommended amount and I felt that this helped. So cute though! I would make this again.

Spicy Cuban Mojo Chicken with Mango-Avocado Salsa

I thought that this was really fun. The chicken was nice and juicy. I felt it was a little bland the first time I made it, yes, I've made it twice. The second time I made it I decided to actually marinade the avocado and mango in lime juice for just a little while so that the avocado wouldn't turn brown. The lime added some nice flavor to the dish as well. I served it with black beans, jasmine rice, and LOTS of cilantro the second time around and it was a hit. We also had the Fire & Ice Salsa on the side - check that recipe out too. One really nice thing about this dish is that it is allergy friendly. I made it for people who had both lactose and gluten allergies and they could both eat it and liked it. Thank you!

Watermelon Fire and Ice Salsa

This was so great! The watermelon I chose was not fully "ripe" because I read that many people had a salsa that was a little too watery. I think this was a great choice. It was still sweet, but not so watery. The flavors really do contrast so well. This was an absolute hit. I will make it again and again. Thank you!!!!

Garlic Mashed Potatoes Secret Recipe

This really was wonderful! Funniest thing ever happened though, I put my boyfriend in charge of it. I gave him the recipe and he set it on top of a recipe for marinated shrimp. He accidentally combined this recipe along with basil and tomato sauce from the shrimp marinade. Still turned out fabulous :)

Broccoli Chicken Salad

This was excellent! Just like what you pay $10 for a tiny little container of at Byerly's - and I made a huge bowl of it! I used Helman's Light Mayo, no sunflower seeds (just didn't have any), Craisins, and Bacos in mine. I loved it. My 4 year old said he loved it too. I asked him what he liked about it and he said "EVERYTHIG". Too cute!

Cilantro Cucumber Salad

Love this! So simple it's not even funny. By itself - maybe not too impressive - but the possibilities are endless. My favorite way to serve it is with grilled boneless skinless chicken breasts and feta cheese. Yummy and healthy!

These were really cute. I love small things like this. I used wonton wrappers instead of tortillas though. I liked them, but I will try tortillas next time. I think they will be stronger :)

Yum! These were great! I only wish I would have added some minced garlic during the mashing process as well to make it extra garlicky. Even my brother's super picky girlfriend ate them and loved it. Try these!

Apparently this was great! In fact, I should have made much more. I didn't even get to try it becuase it was all gone in minutes. I think it would be just as good without quite as much butter and brown sugar though. Enjoy!

Crispy Coconut Chicken Fingers

I loved this recipe! Just made it for a baby shower on Sunday and they were gone in 10 minutes! I did follow the suggestions of using the Panko Japanese bread crumbs instead of flour and I used a butter spray instead of melted butter. I coated the bottom of my baking pan with melter butter and then sprayed the chicken as well. I had to cook it a little longer than the recipe called for, but mine came out crispy. I really liked this recipe a lot! I served it with the Dijon/apricot dip as well as spicy spring roll dipping sauce. Thanks a ton! Ok, I am adding to my review. I have made this recipe now 7 times. Besides the first, all by request. This is an awesome recipe. Use Crisco Olive Oil spray instead of butter to make it more healthy and more crispy. This is a 5 star recipe, don't let others fool you. I am catering for a small wedding today and through word of mouth from this recipe, they requested that I cook for them. Awesome!

Caribbean Chicken

I must say that this chicken was so tender. It really was the most moist chicken I've had in a very very long time. Great chicken! Now, I'm a strange person, everyone else who rates this loves the fruit, but I didn't like the fruit with it at all. I will make the chicken again, but I will serve it with a Spanish rice or something. Still a 5 though!

This was fantastic! I also added extra spices as well as some course ground black pepper. I wish I had added more olives and pineapple as I did not have as much on hand as the recipe called for. I served it over a Spanish rice/orzo blend. I will make this again no doubt!

Tortilla Rollups IV

These were fantastic. I did modify them, I used taco seasoning instead of ranch, I added black olives and sliced green onions. I used jalapeno cheddar and spinach flavored wraps instead of the tortillas, but it was really great. I made them for 3 events over the holidays and people finished them off every time! The only suggestion I have is to not cut them when they are not really cold or they will end up sort of squished. If you want them to look like the picture, make sure you layer the toppings pretty thick and cut it when it's pretty cold. People will love these if you make them!

Greek Saganaki

My boyfriend and I have saganaki every time we go to a Greek place to eat and we love it! This was not the same, but I loved it's unique flavors. I waited until the outside of each peice of cheese was slightly brown then turned them. It was so creamy and warm. We just loved it. Thanks!
