Baked Chicken and Zucchini

I made it pretty much as stated except I used a can of diced tomatoes instead of sliced tomatoes and used both zucchini and yellow squash. Oh, and I also added a few mushrooms. Just a few minor changes, lol. It was delicious. I paired it with thin pasta noodles that I tossed with butter and garlic.

Sweet 'n' Hot Glazed Salmon

I wanted so badly to like this dish. I did not add the dried apricots and used preserves instead of nectar as many of you suggested. Very disappointed. Maybe I did something wrong. I was just ok and I would not likely make it again.

Zucchini and Potato Bake

Made this dish last week. Used red potatoes instead, added chopped sausage and lightly greased my glass pan as suggested by others. Cooked the potatoes in the oven first for about 15 minutes before adding the rest of the ingredients and cooking to ensure that the potatoes were cooked but my zucchini would not be mushy. It came out pretty good. Not a big fan of the breadcrumbs. Ate leftovers with an over easy egg the next day and that was awesome!

Pesto Turkey Burgers

Tried this last night and followed the recipe pretty much. Used a bit less bread crumbs and a bit more feta. Fried them on my stove top and they were pretty awesome. Ate with whole wheat bread, topped with tomato, a bit of mozzarella cheese, avocado, mushrooms, and onions. Had blue tortilla chips on the side. Great low cal meal.

Vegetarian Baked Pasta

I loved it. I listened to the others and only added about 3 ounces of Gorgonzola. I also added one thinly sliced zucchinni to the mushrooms in the skillet. I had to add a bit more sauce though.

Glazed Meatloaf II

It was great! Everyone totally loved it. Especially the sweetness added by the brown sugar. I used about 1/3 cup of bread crumps instead of bread but it still turned out great.
