Chiles Rellenos (Stuffed Peppers)

Reviewed: Jul. 16, 2014
3 stars because this was not easy for me...being my first time to work with peppers this way. THIS DOES NOT REFLECT THE RECIPE...as I'm sure better cooks did a better job. I just want anyone out there that is not real experienced to know ahead of time...it's not easy. I wish someone could message me on what I did wrong. :( I plan on making them again, but my peppers all fell apart. They were ripping here and there...stuff falling out...barely got them fried up. My husband wasn't impressed...with MY cooking...not the recipe. I love stuffed peppers and really want to make this wonderful recipe work! HELP!!!! :)

Easy After Work Chicken Francaise

Reviewed: Jul. 16, 2014
Yep. This is good. I added the pasta like the picture. Probably could throw in a couple of capers if you wanted...but I didn't. Followed the recipe exactly.

Lime Cilantro Rice

Reviewed: Jun. 20, 2014
Used instant rice and cooked it in chicken broth instead of water. That's the only change. Made it for a party. I THOUGHT that what the recipe called for was too much...of the cilantro and such. Wrong. Follow the recipe. Everyone loved it.

South Texas Carne Guisada

Reviewed: May 21, 2014
UPDATE: I followed the recipe exactly a second time because I always try recipe's twice to make sure I didn't mess it up. It was much better. The ONLY thing I did differently was I used tenderized round steak and a small can of green chili's. My husband said 4 stars...not 5 though. Follow the recipe EXACTLY...because I don't think I did...and it was not good at all. Not sure where my mistake was...but my husband told me to stick to my other carne guisada recipe. ;-)

Supreme Strawberry Topping

Reviewed: Mar. 14, 2014
OK...I followed this recipe EXACTLY how it was written. Exactly! It was great! Why didn't I give it 5 stars? Because it was too thick for us but could be my fault. I'm thinking I needed more strawberries. Going to try it again and if I figure out that it was my mistake...will give it 5 stars. Kids loved it! Spooned it over cheesecake. I would suggest doubling or tripling the recipe as there just didn't seem enough for 4. (Could be we just spooned on a lot because it was so good!)

Daria's Slow Cooker Beef Stroganoff

Reviewed: Mar. 13, 2014
I saw how so many people made changes. I really didn't. I left out the mushrooms because I didn't have any. I doubled the meat and added a bit more of the sauce...not quite doubled. I doubled the wine (instead of water), the garlic, Lea and Perrins, etc. Just made...more. The only difference I made was we felt it needed more salt! I made it with white wine...but normally with beef it should be red wine...so I'm trying that next time. OH! I did make one big change...used deer stew meat instead! It's what this Texas girl already has in her freezer! Good stuff. Even hubby was eating it out of the pot...which makes me mad...

Ultimate Twice Baked Potatoes

Made these for a huge Christmas dinner. First time to ever make these and my dad stood over me making sure I didn't do it wrong. He was impressed. Good recipe. Easy to follow. Cooked them in the microwave first until the were ALMOST done...but not quite. Finished in oven. Much faster...same results. :)

Slow Cooker Beef Stroganoff I

Reviewed: Feb. 5, 2014
OK...I read the first two reviews and did make the changes. I HATE making changes to a recipe because I want to respect it. However, I don't have time for mistakes or issues with this family. With the slight changes, it was FABULOUS! Changed out water with beef broth. Sherry might actually make it good. Threw in half package of onion soup mix. Threw in beef cube. The one other thing...I'm going to DOUBLE the meat and possibly triple the sauce! :) It was gone too fast and I wanted leftovers!

Caramelized Spicy Pumpkin Seeds

Reviewed: Oct. 30, 2013
OK...I hate not giving it 5 stars...but I just can't. It's great, but too sweet for me. I used butter and brown sugar. I knew it was going to be sweet when I read the ingredients...but thought I would LOVE it like the others. It's more sweet than spicy. That's the best way to describe it. I would add more spice next time! :)

Shepherd's Pie VI

Reviewed: Aug. 26, 2013
OH MY GOSH!!! This was SO GOOD! We recently ate at a very popular highly recommended Irish pub and my husband had ordered this. It was so good that we wanted to make it again. Found this recipe and did what the others said...used some frozen carrots and peas instead...and just threw them on there...no mashing. Also used a package of brown gravy mixed in one cup of water. Everything else the same. FANTASTIC!!!! MUCH better than the Irish pub even! My Irish mom is requesting the recipe! :) Will be making more of this!!!!

Slow Cooker Carolina BBQ

Reviewed: Jun. 24, 2013
OK...This Texas BBQ girl was looking for something different. We own a ranch...and BBQ is our thing. There sat my biggest critics...dad and hubby. They hated the smell...hated everything about what I was doing. UNTIL...they took a bite. They laughed. Not bad...and told me to give it 5 stars and make it again. These Texas boys were hooked on some "northern" BBQ. You HAVE to add the liquid smoke...or it isn't worth eating. I added probably 4 or more tablespoons for a 4 pound pork. I also made it with white vinegar and cooked on high for 6 hours. Enjoy...even if you're from the BBQ wild west of Texas...it's good!!!!

I need to add to my original review...that I used Coors Light instead of a dark beer. We always just use a light beer. Still fabulous.

Basil Chicken over Angel Hair

Reviewed: May 30, 2013
As I type this...the very picky husband is getting another helping. I used 2 cloves of garlic, minced. Used two cans of tomato, basil, and garlic...drained...like others said. I gave it a splash or two of white wine. It was PERFECT! Easy too...after a long day of work. Will be making this many times...

Slow Cooker Chicken Taco Soup

Reviewed: May 21, 2013
The ONLY thing I would do differently...is add salt! THAT'S IT! I followed the recipe exactly like it says...but cooked it on low a little longer because I was at work all day. I used a very light beer, since that was all I had, and would probably use a stronger one next time. HOWEVER...we could still taste the hint of the beer flavor and loved it! Those saying they couldn't taste it...must not recognize it like we do. ;-) It's good...and my biggest critic...husband...loved it!

Meatball Nirvana

Used deer meat because...well...we are hunters. Guess what? FABULOUS! We were worried using deer meat because it sometimes doesn't work for some recipes. However, this was fabulous 100%! Followed recipe exactly...no changes. First time to ever make meatballs too!

Mrs. Sigg's Snickerdoodles

Reviewed: Mar. 15, 2013
I added green food coloring to make them green for St. Patrick's day...and threw some green beads into the pan with them. Taking them to the party...if I can keep my family out of them! Nope...not flat. Use NEW baking soda and you should have perfect one's...like I do. I uploaded a picture of them on here too. Happy St. Patrick's Day from this Irish woman (who didn't make Irish cookies haha)! ****UPDATE**** It's a year later and I'm going to the same party and those cookies have been requested!!! They were GONE before the party was over!!! The best recipe I've EVER used for these!

Irish Potato Candy

Reviewed: Mar. 5, 2013
OK...so I almost gave it 4 stars because it is not easy to use and handle. My 10 year old little girl needed something for "culture" day at school...we chose this. Best advice? Put in freezer or fridge between each step! I read that and was so glad I did! Also...I mixed together cinnamon, cocoa, and powdered sugar for the end step. I tried to throw them in a ziplock bag and shake like someone suggested but they came out looking like poo. I spread them out on a large cookie sheet and "sprinkled" the mix all over them...turning them a few times. THEN they looked more like potatoes instead of poo. I HAD to keep them cold...or they became a mushy mess. By mid-day...even in a cooler with an ice block...they were all mushed together. What was left at the end of the day...my family and I dug in with spoons! ;-) Tastes great...just hard to handle.

Steak and Rice

Reviewed: Jan. 13, 2013
My husband gave it a 4 star. It was very good and I would certainly make it again! I followed the recipe but made some changes based on other reviews. Added 2 cloves of garlic...green onions...1 1/3 cup water instead of the 2 cups. I would add a bit more soy sauce too. It's good. Don't get me wrong. I also used all of the ginger it called for...even though I'm not a fan of ginger...and I couldn't taste it much so that was good.
