About this Cook
3 VERY picky eaters, and one husband who was brought up on meat and potatoes, meat and potatoes, meat and potatoes. Does not like creativity in the kitchen! I have to be very choosy on what I make...since I am the COMPLETE opposite of all of them!
My favorite things to cook
Everything. I'm not big on typical food from up north...I'm from Texas. I like to cook authentic of everything though. Authentic Italian. Authentic Mexican. Unique stuff! Authentic Louisiana/Cajun. etc. Makes me happy and I have loads of fun!!! Yes..I WILL cook a squirrel!!!
My favorite family cooking traditions
I host HUGE Christmas dinners...several courses, themes, drinks, even decorations have to go with the theme. They have all been a huge hit. (I like to get at least ONE side or even the main course from a restaurant just to fool people.) ;-)
My cooking triumphs
I have combined several tortilla soup recipes into one...trial and error...and have apparently come up with one that will knock your socks off. I don't like sharing the recipe...because everyone likes to change things. My biggest critics fall in love with it. It is begged for and given at parties and other places. I'm proud of that...since I don't think I'm that good of a cook. It's the only thing I've done on my own without a recipe...that I can call my own.
My cooking tragedies
One of those huge Christmas dinners...brought out one of the dishes, and dropped it on the floor!!!! Food went EVERYWHERE! Quick thinking, figured out plan B...and it wasn't for people to eat what I dropped everywhere! One other time, was supposed to serve a punch bowl (elegant one). Forgot to get the punch bowl! Ran across the street to a woman who I KNEW would have an elegant one, and ran back across the street as people started arriving!

Luau Punch
Served it at a pool party along side my strawberry lemonade. The kids/adults preferred the strawberry lemonade BUT liked this one as well. I did not use any can juice as I don't like the taste that the can gives it. All bottle. I also toasted coconut and lined the rim of the glasses with lime juice and roasted coconut. Definitely was a hit. For an adult party...consider mixing in some pineapple moonshine. :) OH!!!! And I did NOT serve it slushy! Just mixed it all together and it was perfect!!!!

Irish Soda Bread in a Skillet
Oh my gosh this was good. I was scared after reading reviews saying if you don't measure'll mess it up. Then my mother telling me that sometimes it's hard to make this correctly. This was my first time and I'm not an expert cook by no means! It turned out...perfect! Husband loved it. The only thing I did differently was use buttermilk like others suggested. I want to try it with milk to see the difference. I always have milk here. :) Will be making this for breakfast too! I also just put the dough on a regular cookie sheet. Perfect! Great with the Irish Guinness Beef Stew!

Buffalo Cauliflower
I'm giving it 5 stars because the GUYS at my super bowl party loved it! I couldn't believe it! Followed the recipe perfectly. I was teased to no end about serving this instead of chicken wings because I was trying to be healthier. They almost refused to try it. But...when one did...the rest ate them all. Very good! Next time...I MAY cook them a little longer.
