Curried Carrot Soup

Best Steak Marinade in Existence

Icelandic Christmas Cake

This made the house smell wonderful! I didn't have lemon flavouring so I added orange zest. Also had only cardamon spice so followed what others did there. Comfort load for sure!

Tofu with Ground Pork Stir-Fry

This was a great base...I too changed it a bit. I didn't have chili sauce so I added chili flakes, yellow pepper, diced zucchini, reg mushrooms. I added tumeric to my rice...it was nummy!

Rempel Family Meatloaf

Good to try some local recipes! It was delicious and so simple. I used frozen bread crumbs rather that crackers. Yummy--hubby said it was better that the brown sugar meatloaf I usually make.

Creamy Rice Pudding

a comfort food and then some. i ran out of milk so for the second amount i used coconut milk...added to the flavor. followed other reviews regarding tempering the egg and sugar timing-- yummy

Carrot and Ginger Soup

I didn't have any squash because I also wanted some extra carbs for my young kids--so I boiled a yam, added cilatro to my boiling carrots (for extra flavour)and added some coconut milk when blending all together...yummy!

Spinach Chickpea Curry

Mmmm...loving anything spinach and chickpea-ish these days...I didn't have creamed corn so i used peaches and cream corn...fresh garlic and ginger. Made my own curry paste like fellow reviewer sugg. Put it over asian coconut rice and topped with cilantro. Sooo ;yumm

Blueberry Apple Crisp

It was good--I added oats to the topping mix. Also lemon juice on the apples and cranberries added the fruit combo. I like my crisp tart cause we serve it with icecream.

Salsa Chicken Rice Casserole

i changed this so much that i think i made my own recipe. wanted to use chickpeas instead of chicken and reduce salt by not using the canned soup. so i mixed 1/2 sourcream with the cooked rice and a bit of cumin. cooked onions first and then added the chickpeas and fresh cilantro to it. layered rice, then chickpea mix, cup and 1/2 of salsa then (only a cup of) the cheese mix. serve with avacado and sliced green onions...mmm.
