Italian Dressing Mix

Good. I am tired of paying the price for the dressing mix at the store!! I used garlic powder, dried onion, celery seed 1 1/2 Tbl. salt and rest of ingredients as stated then pulsed it all in my coffee grinder (which I use only for seasonings).

Enchiladas Suizas

Yes, very good. Not spicy enough for my family - adding more cumin next time. Used flour tortillas, colby jack for cheddar and added a bit of bottled salsa verde to sauce. It was a nice break from my regular standby. Whole family enjoyed it.

Balsamic-Glazed Salmon Fillets

I gave this three stars as some family members loved it while others did not like it at all. I used sockeye salmon which has a stronger flavor - maybe I'll use a king salmon next time. Easy.

Absolutely Fabulous Greek/House Dressing

Applesauce Doughnuts

Since I was out of applesauce I used pumpkin instead. I thought they turned out fine giving it 3 stars - but since my kids loved them I gave the recipe 4 stars. We liked them best with a simple maple glaze on top.

French Dip Sandwiches

Great recipe for these hot summer days. I always add more of the spices asked for in recipes and I did so in this one. I ground the pepper instead of adding peppercorn and I served on buns. I also sliced onion and put them in with the roast to cook. My husband cooked green pepper and onions to add to his sandwich. Yummm!

Corn and Crab Bisque

Loved this recipe. Easy and good. My whole family loved it. Remember it is a bisque and not a chowder - I was expecting someting a bit thicker. I added more seasonings than called for and also put in some of Emeril's Essence. I used sweet frozen corn instead of fresh. Pefect recipe for fresh caught crab.

Roasted Pears with Caramel Sauce

Perfect autumn recipe. Easy, easy - and delicious. It took a 9X13 pan to fit the pears - I used 8 TBL. butter and a bit more sugar. I chopped up a bit of crystallized ginger and fresh grated nutmeg (idea from "30 minute meals" on the food network - they had used canned pears for their recipe). Because my fruit was very ripe (I used bartlett pears) I reduced the first cooking time by 10 minutes. Even then the fruit was just beginning to fall apart. I served the pears with vanilla ice cream instead of sour cream. The only minor complaint was eating the skin of the pear - they didn't like the texture. I will make this dessert again for my family and for company.
