Spinach and Strawberry Salad

This was great- I made it for a playdate and the toddlers kept wanting more, more, more! The only alterations that I made were to add mandarin oranges and sliced almonds, and to decrease the sugar to 1/4 cup. Thanks for the recipe!

Cheese Fondue

This was great- I usually buy the packaged cheese fondue from the grocery store and when I couldn't find it, I decided to try this recipe. It was just as good if not better and very easy! Made it exactly according to the directions and it turned out great- I wouldn't change a thing! Even my 2 year old gobbled it right up with bread cubes and cubed green apple. Yum!

Whipped Butternut Squash

I just finished making this in preparation for Thanksgiving dinner tomorrow! Excellent with a few modifications suggested by other reviewers: I used 2 large butternut squash that I baked for 1 1/2 hours in 1 inch of water until very soft. I added 1 c of sour cream, about 4 T butter, salt, cinnamon, nutmeg, allspice and cloves. I used quite a lot of spice- just kept adding until it tasted right. I also added a teaspoon of vanilla- delicious! I whipped it in my kitchenaid mixer but not too smooth- past experience told me that it would turn into a babyfood consistency! I will definitely make this again.

Easy Spinach Lasagna with White Sauce

Simple and delicious! My husband doesn't like tomato sauce, so this was the perfect lasagna for us. I had read the reviews and made a couple of alterations. I used Buitoni refrigerated alfredo sauce because there was some criticism of jarred sauce. And I substituted sundried tomatoes for the carrots- would highly recommend this as they really added to the flavor of the dish. I used 2 cups of mozzarella- on top of each veggie layer and again on top. I squeezed the spinach dry after microwaving (which I think is implied in the recipe, but not explictly stated), used no-boil lasagna noodles (no problem with them turning out too crunchy) and didn't use the added milk. It was a little too runny when I checked it after 60 minutes, so I continued to cook it uncovered for the final 15 minutes. Highly recommend- it's going in my permanent file!

Cool Lime Pie

I made this pie for several parties this summer and it was always the first to be eaten. Everyone raved about it and wanted the recipe. It is so deceptively easy to make and the pretzel crust is really unique. I used just 2 drops of food coloring for a more natural look and served it garnished with fresh sugar coated lime slices-- delicious!

Three Bean Salad

This is a really great 3 bean salad recipe and so, so easy to make. I add chick peas, too. I used the full amount of sugar and thought it was perfect as is.

Baked Squash and Maple Syrup

This is a delicious recipe, was very well received on Thanksgiving, and so much easier than my previous squash recipe that required the squash to be peeled and cubed. I used large butternut squash and found that they needed to bake for at least 90 minutes before they were very tender. I read the reviews about it being a bit too soupy, so I added just enough chicken broth and maple syrup to puree the squash and it came out perfectly. I will definitely make this again.

Big Soft Ginger Cookies

Really great recipe. I didn't know that I liked gingerbread cookies until I made these. And my 2 year old loves to help (and reap the rewards!).
