About this Cook
I'm trying to expand my repertoire, with special attention to budget friendly cooking and healthy and vegetarian choices in between working full time and a happily busy social life.
My favorite things to cook
I love grilling a salmon with garlic and rosemary, with a caesar salad (with anchovies!), mashed potatoes, fresh asparagus, and lemon bars for dessert. I also love to make spinach stuffed chicken breasts, twice baked potatoes, and (surprise!) brussel sprouts. I love veggies, desserts, seafood, and fresh guacamole!

I'm starting to make Thanksgiving dinner all by myself.
My cooking triumphs
Made from scratch pumpkin cheesecake. Winning the company bake off for my chocolate eclair cake.
My cooking tragedies
Having a faulty glass oven door shatter all over the special dinner I was making for our anniversary. :O

Savory Chicken Breasts
Very easy but pretty boring. I think I would substitute the Stovetop stuffing for the dry breadcrumbs if I were to make this again.

Easy Spicy Roasted Potatoes
This recipe is easy as as can be, and great for a thrifty side dish. I didn't add the cheese, abut I did add some chorizo for a one dish decadent lunch. My husband and his friend freaked out for this - I'll definitely be asked to make this again soon.

Savory Crab Stuffed Mushrooms
Pretty tasty. These turned very cute, and they were simple to make. The stuffing was a teeny bit dry for my taste. I would make these again.
