Balsamic Roasted Pork Loin

I seldom follow a recipe exactly, but this was a great jumping off point. I marinated a pork loin in balsamic vinegar, olive oil, onion, garlic and a little honey for about an hour, then baked it in the oven, covered in tin foil, just removing the tin foil for the last 10 minutes. It came out tender, but just a tad dry. My husband raved about it, and used the leftovers for sandwiches. Will make this again.

Kale Puttanesca

This was a great recipe, and I'll be making it again! I've been looking for more ways to use kale, because it is so healthy and easy to grow. I used penne pasta, a pint of home-canned tomatoes, and 8 oz of homemade sauce, and added broccoli and peas for extra veggie punch, and omitted the capers and achovies. This is very hearty for a vegetarian main dish.

Banana Banana Bread

This is a great basic recipe. I use 3 bananas - I mix 2 into the batter, then slice the third one and fold it in. I do dress it up with a little bit of vanilla, cinnamon and nutmeg, and a sprinkle of turbinado sugar on top. It is also great with slivered almonds, walnuts or pecans. Using half whole wheat and half white flour will give you a more hearty bread. Very versatile and a tasty way to use those overripe bananas!

Whipped Shortbread Cookies

These are delicious. I've made them the last three holiday seasons, and instead of cherries, put either chocolate, jam or lemon curd in the center of each cookie. They are light and delicate, yet rich and decadent!

Apple Dumpling Cake

This was easy and tasty. I added some vanilla to the dough, and sprinkled the top with cinnamon and raw sugar. Next time I will add cinnamon to the apples, and put a little bit of dough in between the layers of apples.

Best Ever Blueberry Cobbler

This is a fantastic cobbler recipe. The only things I changed were to add about 1/4 tsp lemon extract to the dough, then sprinkled raw sugar over the top to make a nice, browned up crust. Easy, and I'll be using it for other types of fruit as well!

Chicken Berry Salad

This is a delicious summer salad, and easy to modify. I used fresh blueberries and dried cranberries, plus toasted pecans and mixed lettuce greens from the garden. I had a bottle of lite honey dijon dressing on hand, so I mixed that with juice from half an orange, then added a little gourmet mustard to 'kick it up' as a certain TV chef would say. 2 chicken breasts were rubbed with additional mustard and done on the George Foreman grill, bringing the whole salad together in about 15-20 minutes, topped with a little freshly grated Romano. The nice thing is, you can make it a heartier main course by adding more nuts and chicken, or a lighter salad course by cutting down the chicken:greens ratio. Would be great with slightly wilted spinach!

Bob's Habanero Hot Sauce - Liquid Fire

I love growing habaneros since they're beautiful with the wrinkled orange fruit - but then I never know what to do with them. This hot sauce answers that question. I made a double batch with at least the recommended amount of hab's. It was really spicy but mellowed with time. Wonderful to had a smokey heat to chilis, bbq sauce, soups, chicken, or anything. Will definitely be making more of this when the habanero harvest comes in next year!

Polenta and Vegetable Casserole

I haven't made this as a casserole yet, but threw black beans, polenta, corn, and a cooked salsa in a pan with some cheddar and garlic for a tasty meal. I'll definitely be making this as a casserole, but will use a can of green chiles and can of drained diced tomatoes instead of the salsa. It would also be good with crumbled burger or seasoned tofu to add some extra protein. Easy, quick and yummy!
