Dutch Apple Pie with Oatmeal Streusel

Reviewed: Nov. 22, 2012
I have made dozens of pies but never apple, until now. I tried this after looking at dozens of recipes and I'm so glad I did - it was stupid good. Two things I'd recommend: 1.) put your apples and sugar into a bowl and let this sit for about ten minutes - the sugar will draw out a lot of moisture that you want to discard before putting the filling into the crust. Once you've drained the apples, mix in your spices. 2.) instead of flour, I use 2 tablespoons of tapioca - I always use tapioca in fruit pies, works beautifully every time. This is a really excellent pie, thank you for sharing!!

Vegan Split Pea Soup I

Reviewed: Aug. 2, 2010
I love this soup! I added too much barley and it dried up like a lake in the desert but some vegetable broth smoothed it right out (I'll measure more carefully next time!). This is fantastic, a keeper!

Scalloped Potatoes and Onions

Reviewed: Jan. 2, 2010
I have never used a scalloped potato recipe that calls for chicken stock instead of milk...I was a bit skeptical until I tasted it. A perfect recipe!

Buckeye Balls II

Reviewed: Dec. 22, 2008
So easy! I'm not great at coating things in chocolate so I cheated a little - I melted chocolate in a zip top bag, then put a small dot of it onto a piece of parchment, topping it with a Buckeye - thus, the bottom is coated. I put it in the fridge to set, and when chilled I used the same zip top and covered it from the top, letting the chocolate roll down the side of the Buckeye - I did have to use an offset spatula to smooth it out a bit, but it worked fine. Thanks for the recipe!

Clone of a Cinnabon

Reviewed: Nov. 10, 2008
Delicious - these turned out perfectly! I used two packets of rapid rise yeast and kneaded the dough myself instead of using the bread machine, letting it rest an hour before rolling it out. Instead of cutting it into 12 pieces, I cut them into 8 larger pieces. Yum! I will definitely make these again. Thank you!

BBQ Pork for Sandwiches

Reviewed: Jun. 22, 2008
This turned out beautifully! There are only two of us, so I used 1.5lbs of pork loin and some Famous Daves barbeque sauce to finish it off. We served it on whole wheat buns with mac and cheese - great, simple supper! Thanks for sharing the recipe!

Baked Potato Salad I

Reviewed: Sep. 11, 2005
I needed a side dish to take to a barbeque and this was perfect! It's just like a potato skin, only in casserole form. I used Yukon Gold potatoes and light Velveeta cheese. And instead of mayo, I used 1/4 cup light mayo and 3/4 cup fat-free sour cream. It was fantastic, thank you!
