Honey Baked Chicken II

Reviewed: Mar. 4, 2006
Soooo flavorful! I used it on a whole roasting chicken. The juice it made in the bottom of the pan was absolutely great. The chicken took alomost 1.5 hrs to cook though!! Next time, I will cut it up like the recipe suggests. Thanks for a good one.

Baked Pork Chops I

Reviewed: Mar. 4, 2006
This recipe was easy and great. I used 4 boneloss chops and it only took a total of 40min from start to finish. DEFINITELY use the wine!!! Simmer together the soup, water and a GOOD DRY white wine (I used Luna da Luna Pinot Grigio) until it's piping hot. Then, add it to the pork chops once you finish browning them and stick them in the oven for 20-30min depending on thickness. The sauce is so flavorful with the wine in it (reminds me of marsala) Moist and yummy!!

Baked Chicken on Rice

Reviewed: Feb. 15, 2006
I made some minor adjustments and this came out good. I used only 2 cups milk, DRAINED mushrooms, 1 can cream of broccoli and 1 can cream of mushroom-it was the PERFECT consistency. Rice was tender and perfect, not mushy or dry. I used split chicken breast with bone and cooked about 15 minutes longer. I did NOT use onion mix-instead I used one packet of dried garlic dip mix (bought at Big E!) sprinkled half in liquid mixture and the rest on top. It was really good!

Fantastic Lemon Butter Fillet

Reviewed: Feb. 15, 2006
Very easy to make. I used less lemon (about 1/2 tsp lemon juice) and used less butter (about 4 tbs) and it made just enough sauce. I might recommend no-salt butter because the sauce was on the salty side, but overall it was very good. The tsp lemon juice added just enough tang to not make it overwhelming. Thanks for a great one!

Pignoli Cookies I

Reviewed: Dec. 19, 2005
The BEST Pignoli I have EVER eaten!!!! When dropping them on the cookie sheet, make sure you have a SMALL crescent shape--they grow so much in the oven! Very sticky batter but putting it in the fridge for a few minutes makes it MUCH more managable when rolling it in the pine nuts--and don't skimp on them-they hold the cookie together! I ended up using more pine nuts than expected. The best cookie recipe ever. Thank you Adele!!!

Farm Macaroons

Reviewed: Dec. 19, 2005
These cookies came out soooo flat and stuck to the cookie sheet. I was expecting a thicker macaroon. They taste good when they first come out but end up hard. My husband ended up taking them out of the oven every 5 minutes to fluff them back up into a ball-then it looked like a macaroon but we didn't figure this out until our last batch was in. Definitly not what I expected-will not try again.

Slow Cooker Chicken Taco Soup

Reviewed: Nov. 26, 2005
This soup was very good. It just needed a little more spicy flavor to it for my tastes. I added 1tbs of cayenne, 1tbs garlic salt, 1tbs chili powder and a dash of cumin. I served it with crushed torilla chips and a dollup of sour cream. I also added 3 cloves of crushed garlic inthe beginning. Overall I thought it was really good and I will make this again. Thanks for another great soup recipe!

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Nov. 26, 2005
This recipe was great!! I used thin sliced boneless skinless breasts, 1 10oz package of fresh mushrooms, quartered the garlic cloves, added a little red wine while simmering and followed all the other directions exactly as they were printed. Nice flavor! I served it over rice with broccoli on the side. The mushroom sauce was sooo flavorful! Thanks for this keeper!!

Broccoli, Rice, Cheese, and Chicken Casserole

Reviewed: Nov. 14, 2005
Mushy and bland. I sauteed 1/4 yellow onion in butter before adding it to the mixture. I boiled 3 boneless, skinless chicken breasts, adding butter, poultry seasoning and garlic to water then cut it into bite size pieces. Sprinkled bread crumbs on top with shredded cheese for last 15 minutes in oven. I added cayenne pepper and garlic salt to my plate because it needed more flavor. Don't get fooled by the milk-it looks VERY milky in the pan but it cooks down. OK overall but I'm not sure what others are raving about.

Best Beef and Broccoli

Reviewed: Nov. 4, 2005
This recipe took exactly 45 minutes from start to finish. It was fantastic! My husband and I loved it. I used Skirt steak cut into bite size pieces because that's what I had. I followed the recipe exactly otherwise, just adding a dash of crushed red pepper, cayenne pepper, a dash of teriyaki sauce when browning beef. Soooo good and easy-I serve it over beef Rice A Roni. Definitely a keeper!!

Slow Cooker Kielbasa and Beer

Reviewed: Oct. 17, 2005
This is a 4-star recipe ONLY if you do the following: Add 1/2 cup of honey mustard, 1/2 cup apple cider vinegar, 2 Bottles of Sam Adams beer, any saurkraut and polska kielbasa PEELED! Eat alone or put on a fresh hard roll. If you only use beer, you'll know you're missing something! I make this all the time this way.

Spicy Chicken Thai Noodle Soup

Reviewed: Oct. 2, 2005
I love spicy dishes so I decided to try this one. It was good, not great and I made some adjustments. First, I added 2 more cups of chicken broth because there wasn't enough liquid. I wouldn't recommend the whole onion chopped, maybe half. There was too much curry-next time I would cut it in half-I didn't even add the red chile pepper and my mouth was on fire when I first tried it! I used fine no yolk egg noodles instead of the rice noodles, which I cooked separately to avoid the starchy taste. Also, I recommend cutting the oregano in half too-dried spices are too much. I will make this again, but not with too much curry or oregano. The soup was good overall.
