About this Cook
My mom didn't cook much when I was growing up, so I didn't learn when I was young. I lived on Kraft Mac n Cheese and Lean Cuisine through college. Then I moved to South America, where you can't find many prepared foods, and I had to cook or starve. So I decided I'd better learn to cook. Ever since then, I've been teaching myself, having fun learning and experimenting.
My favorite things to cook
Mexican, risottos, asian-influenced food.
My favorite family cooking traditions
I grew up eating swedish pancakes, and they are probably my favorite food. It's the first thing I ask for when I go back home to visit my parents. My family also has made a tradition of "Special K Bars" (a gooey chocolately fattening and delicious treat).
My cooking triumphs
Chocolate chip cookies--I've got it down to a science and I'm very proud of it. I've gotten very good at risottos as well.
My cooking tragedies
Nothing too tragic yet.

Good Old Fashioned Pancakes
I have made these a few times, following the recipe exactly. These pancakes taste great and have a fantastic texture. I didn't find them too salty, but tend to be heavy handed with the salt anyway. Love this recipe!

Blueberry Crisp II
Wow, I never would have thought to put mayo in a crisp topping, but it actually worked! One advantage of mayo over butter is that it is much easier to get the crumbly consistency. WIth butter, I always forget to take it out of the fridge early, and it is too hard to mix properly, or I try to soften it in the microwave and it ends up too melty. This is foolproof. We served it with whipped cream on the 4th of July and everyone loved it!

Blueberry Zucchini Bread
A great use of our CSA zucchini and blueberries! I didn't have four mini-loaf pans - I only had one large loaf pan and a muffin tin, so that's what I used, and it turned out awesome! Update: I have now made these into muffins a few times and they always turn out amazing. This recipe is now a staple for me!
