I have started cooking everything at home because my son and I were diagnosed with Celiac in June 2010. It is a condition where gluten (found in wheat, rye, and barley) attacks our bodies so we are not able to eat much processed foods or out in restaurants any more so I have started having fun in the kitchen and have been learning how to make all our favorites food gluten free.

Flatlander Chili
This is a great start! It taste great the way it is but my hubby says it is missing something. We will be making this again and playing with the flavor just a little.

Simple White Cake
I made this with a few changes for allergy reasons and from other reviews. I added the extra 1/4c of milk and used 2 tablespoons of vanilla, I also had to use a gluten free flour (I used Jules Gluten Free all purpose flour) They turned out GREAT, and EXTRA fluffy not sure if it was the flour change or if it was because I filled my empty cupcake spots with water adding extra moisture to the oven. THANKS!!

Garlic-Herb Roast Pork
This was really good. Mine was a little salty but that could be on me I think I added a little more than it called for. I was worried that it wouldn't be cooked all the way because everything I have read says that pork should be cooked to 160, but I checked it again before serving and it made its way up to 160 so I was happy. I used dried (ground) herbs and this was still really good. THANKS!!!!
