Mapled Ham

This is an excellent recipe. While fine as it is, I changed it up a little bit to suit personal taste and ingredients on hand. I had to skip the cloves since I had none, but cloves are not my favourite taste anyway. I brushed maple syrup on my ham about 2 hours ahead of time and let it set. I also added a few drops of liquid smoke to both the water my ham was baked in as well as the stove top sauce, to give it a hint of hickory which we love in this house. I baked it about an hour earlier on a lower heat. I made a double batch of the sauce since we LOVE sauce on our whipped potatoes, which we always have with ham =o). I also thickened with a little cornstarch. Great base recipe, easily altered to suit your personal taste!

Curried Carrot Soup

This is a great base soup. I made plenty of changes to suit my own tastes, though. I grated the carrots to make them easier and quicker to cook. I added a TON more Indian spices, including garam marsala and tumeric, and used HOT curry. I love spicey foods! I also added chopped celery. When everything was sauteed to softness, I pureed it; once pureed, I added about 2/3 cup plain yogourt, which reduces the hotness of the spices without taking away the flavour. The yogourt will also make the soup creamier and a bit thicker. It turned out perfect for me! If you are adverse to strong carrot flavour, try using the sweeter baby carrot...be aware that they always seem to take longer to cook!

Fried Cornmeal Mush

Sorry, this just did NOT work out for me...I thought I would LOVE this but I found it truly disappointing...I followed the recipe exactly (how could you not? It's so simple), but it was a huge tasteless letdown =o(.

South Beach Peanut Butter Cup

While this doesn't taste EXACTLY like a peanut butter cup, it DOES taste exactly like the ice cream version of it. You would never say this is low fat or low sugar! What a delightful way to get your Reeses fix while dieting! =o)

Cherry Tomatoes

This was delicious! I decresed the oregano, as it's a strong flavour, and I used a whoel small carton of tomatoes. I added feta cheese made with goat milk and herbed with garlic. Absolutely delicious, I ate the whole thing in one sitting!!!

Quick and Easy Brownies

The only alteration I made to this recipe was that I used a 1/4 cup of butter LESS than it called for, because I ran out...but this didn't seem to affect the recipe. They were still moist and chewy and a very yummy brownie. This is a good recipe to make if you aren't in the mood for anything fancy, just a good ol' fashioned brownie. Nice to serve with vanilla ice cream. I suggest using large size eggs to reduce "cakeiness".

Blueberry Lemon Bread

This recipe was delicious...I added slightly more lemon zest, since we love lemon in our house. I also used frozen blueberries, and they didn't sink at all. I baked mine in an 8x8 square pan and cut into squares. Very yummy snack!

Easiest Peanut Butter Fudge

This WAS delicious...I followed the advice of others and used less sugar/more peanut butter...but BEWARE! If you are going to add more peanut butter, remember to REDUCE YOUR BUTTER! I didn't do this, and my fudge was GREASY as it was setting...I soaked through four paper towels blotting the top! Good recipe, but there are simpler ones with just as yummy results.

Sue's Two-Chocolate Chip Cookies

This is BY FAR the BEST chocolate chip cookie recipe I have ever tried!!! It even tops my sister's 'Secret Chocolate Chip Cookie Recipe'! I only used chocolate chips because I didn't have any other chips on hand, and I actually forgot to add the salt and added a smidgen more vanilla, but they turned out *divine*...even the smell as they were baking was heavenly! Love it!

Banana Muffins II

This recipe was really good...I found the batter a bit thicker than I am used to, but that didn't seem to affect the final outcome. I added a teaspoon of vanilla, and I also added chocolate chips simply because my daughter loves them. Once I filled the baking cups, I sprinkled chocolate chips on top of the batter as well - this looks decorative, and eliminates the need for any icing/spread.
