This is alot like the recipe my Mom gave me: it's for when you want the taste of the big, grand carrot cake, but you are dishing it out to a large pot-luck type of crowd!

Pizza On The Grill I

Maybe I'm just a bad pizza dough maker, but this didn't make up easily for me, at all. I had everything ready to go, but the crust was done before the pizza was, and needed to be broiled in my oven. Oh well: think I'll stick to my pizza stone....

Spicy Sweet Potato Salad

This has been a big hit this year, but here are some minor changes I make each time: I use Yukon Golds and Sweet Potatoes. I also omit the red onion and substitute green onions: then you can use the jalapeno OR put in 2 tsp of sriracha hot chili sauce (in the Asian section of the grocery store). Excellent dish!

Spicy Chicken and Sweet Potato Stew

This is a great recipe, with unusual, but excellent seasonings! I had extra time, so I let mine cook about 50-60 minutes, and I really didn't need the flour/water to thicken it. I was shy on the chili powder, but this appealed to my family more. But, what an excellent soup/stew!

Lemon Poke Cake I

This recipe is wonderful! I added a glaze, made with 3 cups confectioner's sugar, 2 tbsp lemon juice, 1 tsp milk, 2 tbsp butter and 1 cup coconut - this added a bit of texture to the cake. It also covers up the holes! Loved it!

Mom's Best Pork Chops

I "clean the frying pan" with 1/4 cup water, and 1/4 cup white wine: bring it to a boil, let it cook down for 2 minutes; then add it to the chops. Very good recipe: my Mom used to make it too!
