Sausage Baked Ziti

Suprised at how good this was. I tweaked it a little, when don't I. Only because I didn't have the exact measurements, slightly less pasta and sauce added a little water, extra ricotta. I just slapped it on top. I had no Mozzerella so I used what Farmer's cheese I had left from the Farmer's market. I've found this to be a good substitute for Mozzerella. And sprinkled with romano. I have no idea how long I cooked it since I forgot yto set a timer! lol

Best London Broil Ever!

I had left over homemade stewed tomatoes that I didn't want to go to waste so this recipe was great for that. The flavor was good but not sure how you can cook a london broil for 3 hours at 350. After 1.5 hours it was way over done. I guy in Texas thought it was the lack of humidity but I'm in PA and had the same problem. I have a separate thermometer in the oven too so the temp was correct.

Penne with Spring Vegetables

After coming home from vacation to 20 pounds of sweet peas to be blanched and frozen and having an event to bring a dish to this recipe saved the day! I did modify it a bit and it was a big hit! Also had asparagus to be dealt with so I blanched those and the peas (2 min each) then into ice water to cool and drained. We had been given a stick of delicious salami from an employee who works at a local factory and I thought that looked like it would be good in this. My husband thought that vinegar would give it that italian pasta saladness, though that is not what I was shooting for, I added 1 tb of apple cidar vinegar. I love cheese but I would cut down a little on the parm next time. I think the recipe meant for it to be served warm but I served it cold, therefore it did need more oil eventually. IT WAS AWESOME!

Sicilian Meat Roll

I used V8 instead of tomato juice and I didn't have any ham but I think this might be the tastiest meatloaf I ever had.
