Quick Chicken with Asparagus and Provolone

I made this last night because I had chicken and I had asparagus and needed some inspiration. I love it. It gets 5 stars because it lived up to its name, it was quick and I love that you can have all the ingredients on hand and come up with an impressive dish. I only altered it slightly and added 1 tsp of dijon mustard to the egg mixture (only used 1 egg) and that's just a chicken cutlet preference of mine. Also added some more cheese. One slice on the chicken then asparagus then another slice on top. And used fresh asparagus because I didnt even know it came in a can. Next time I am going to put some sliced tomato on the chicken, then cheese, the asparagus, then cheese again. YUM! Thanks for this recipe that easily fits into my rotation

Slow Cooker Chicken and Dumplings

I cant give it 5 stars because I changed many of the things about the recipe. Also I dont have anything compare it to because it was my 1st taste of Chicken and Dumplings (I am from the North) As per the prior suggestions I used 1 can cream of chicken and 1 can cream of celery. I also added 1 cup each of celery, carrot, potato. I diluted it with 2 cans (14.5 oz) of chicken broth instead of water. I also used 1 canister of reduced fat pillsbury cresent dough, rolled out very flat and cut into strips. I dont think you needed 2. I also used 1/2 a rotisserie chicken and it came out great even after cooking for so many hours. I liked the little bits of chicken instead of big chunks. It came out very thick and more like stoup which I liked. Because of the soups it came out very salty but I really liked the dumplings. I also added quite a bit of pepper to spice it up. Next time I would used the reduced sodium soups, add some frozen peas, and maybe try to add some thyme, paprika, & parsley. I really think the addition of the veggies makes it much more flavorful and a must have in this dish

Broccoli Chicken Casserole I

I cant give it 5 stars because I made most of the changes suggested in the reviews. I sauted the chicken on the stove before mixing. I used 1 can of cream of chicken soup and 1 can of cream of celery. I also used 3/4 cups of milk and no mayo. I also mixed everything together, didnt layer it, but I saved 1/2 cup of stove top for the top and mixed in the rest of the package. Next time I think I will put more on top because I liked it crispy. I might try making the stuffing 1st next time before I mix it. Its easy and quick and always have these items on hand so its a keeper

Shepherd's Pie VI

I changed it a bit as per other people's suggestions so it only gets 4 stars. I added 1/4 cup of Worstechire (sp?) sauce and a bit more broth to make a gravy. I sauteed the carrot & onion in some EVOO took them out and then browned the meat and put them back in with some chopped garlic. Make a very moist and delicious filling. I also made my mashed potatoes more flavorful by adding some heavy cream (1/4 cup) (could use milk or sour cream too)and some garlic powder. I omitted the cheese from the recipe because it didnt need it and I topped it with some sprinkles of paprika and chives for color and it added a great looking color on top.

Butternut Squash Bisque

I LOVE this soup and I never had squash before other then testing my son's babyfood. It was super simple since I used already chopped squash and an imersion blender. Couldnt have been easier and the taste is out of this world. I wish we were having company because its such a fancy looking soup with gorgeous color. Perfect for a fall dinner party

No-Cream Pasta Primavera

I love this recipe. I followed it as written except I used more veggies, which I tend to do since I dont measure them. It was so light and delicious hot or cold. I think it can be used to serve to company or you could make it to bring to someone's house as a main dish or side dish. This recipe is added to the rotation for the rest of the spring/summer! oh 1 think I didnt like was the green beans, I would leave them out next time and add some broccoli and maybe some cubed eggplant too.

Berry Trifle

Made this for Easter dinner and there wasnt a speck left in the bowl. I only changed two things slightly, I used fresh strawberries that I marinated in some sugar for about 2 hours before I used them, I also used Frozen blueberries and rasberries. And I put some fresh strawberries and blueberries on top. Next family dinner I was already asked to bring 2.... This was the perfect dessert, not too sweet but very very delicious and EASY!

Buffalo Chicken Dip

This dip was great! I am not a fan of the canned chicken so I poached 3 small chicken breasts and then put them in the food processor. Worked like a charm. Mixed everything up....minus most of the cheese. I didnt think the recipe needed it so I just sprinkled some on the top. The grease everyone speaks of is from the wing sauce not the cheese. I had it on top of mine and since I barely used any cheese it has to be from that. I also used the Franks wing sauce as recommended by others. It was great with Fritos scoops and celery cut into nubs. Nubs so that there is no need to double dip. I am making it again this weekend!

Slow Cooker Enchiladas

I changed this recipe up a bit because of the ingredients I had on-hand. I think I will stick to it because it was surprisingly delicous I used shredded chicken instead of beef, could easily be done with rotiserre chicken too I used a can of Campbell's Ranchero Tomato Soup that I had in my pantry for months and no recipe to use it. It was Perfect for this recipe and gave it such great flavor. I used less cheese because I didnt have much on hand. I also used 1 1/2 cup 3 Cheese Crumbles + 1 cup shredded for the cheese mixture and I think it was really cheesy because it didnt disappear like the shredded does. I will use this again as well. Next time I will add some drained black beans or refried beans to give it even more flavor.

Andrea's Pasta Fagioli

EXCELLENT for sure I did use a 28 oz can of whole tomatoes and 2-8 oz small cans of sauce because it was all I had but I loved the chunks of tomato, and I used 1/2 broth 1/2 water as suggested and only used 1/2 a lb. of pasta which was a smart move. Next time I might chop some pepperoni too. But it was great for dinner and leftover even better

Holiday Chicken Salad

I followed the recipe exactly which I dont often do but from the rave reviews I wanted to be true to the recipe. THIS WAS THE BEST CHICKEN SALAD I EVER MADE....OR EATEN. I cant believe I know how to make chicken salad so delicious. I will never purchase it in a gourmet market again. Next time I will make a double batch so I have even more left overs to spread on crackers!

Slow-Cooker Chicken Tortilla Soup

I LOVED THIS SOUP I HAVE HAD 3rds tonight Some changes I made -I didnt have time for the slow cooker so I simmered it for about 45 minutes (i put everything in a pot to simmer while the chix poached & then I had to shred) -I poached the chicken in broth before I shredded it -I added 1 1/2 cups of celery 1 cup carrots 2 cups zuchinni that made it more stew like them soup like but it was a great way to get some extra veggies in and to use them up before they went bad. -crunched up store bought tortilla chips for the top instead of corn tortillas -omitted the corn because I forgot to buy it A local restaurant makes the exact soup on their menue with all the veggies I am sure of it. next time a bit more broth to make it a bit more soupy and some avocado on top as well MAKE THIS SOUP TODAY!
