Frozen Cherry Cream Pie

This is a keeper! I changed a couple things and I'm glad I did. First, and put the 4 oz of cream cheese in the microwave for 30 seconds to soften. Then I beat it with a hand mixer just to get it smooth. Then I added other ingredients just as stated. I REFRIGERATED it instead of froze it. It was perfect. It was a sweet treat but not too rich. I made 2 of these. One with the exact ingredients called for, and one with no sugar added cherry pie filling and sugar free cool whip. Both were excellent. Next time I want to add in some fresh blueberries. This was easy and very yummy.

Burrito Pie

Very good. I made a couple changes: I used a can of black beans and a can of pinto beans instead of refried beans. I only used 1 lb of beef. And I added a package of taco seasoning. I also ommitted the green chilis and black olives. I let the mixture simmer for about 35 minutes. I will make this again. Very good and easy.

Baked Potato Skins

This is the potato skin recipe I have been looking for. Very good, and you can adjust the toppings to your liking. I used real bacon bits instead my own bacon.

Chicken Enchiladas II

These are excellent! I actually put the green chilis in a food proccesor so they were more of a sauce than chunks. This is a keeper! Very flavorful and tasty. I doubled the recipe, followed it exactly, and I wouldn't change anything.

Chili Rellenos Casserole

I saw this recipe and it looked really good. I wanted chili rellenos without the mess. I omitted the flour, milk and evaporated milk. (It just sounded better without them) and I used enchildada sauce in place of tomato sauce. Also, *very important for consistency*, I beat the egg whites till fluffy and then mixed in the egg yolks.

Easy Alfredo Sauce II

I made this alfredo sauce in the morning and took it to work in a crock pot for a potluck lunch. It was sooo good and lots of people asked for the recipe. I used half and half so it would be a little bit thinner. We also ate the leftover the next day and it did not separate when we reheated it. Absolutely a great recipe! You can adjust it to your liking and you can't screw it up. Yum.

Fruit Pizza II

I love this recipe!! The only thing I changed was I used cream cheese and marshmallow cream, instead of whipped cream. (I like it better that way). The glaze over the fruit makes it so sweet and good. Very pretty, so it makes a great dish for entertaining.

Green Chili Stew

This is wonderful. I added mushrooms and carrots and a few dashes of red wine vinnegar and it turned out great. I browned the meat, and then cooked it all in a crock pot. Thanks for the great recipe.
