Slow Cooker Chicken Curry with Quinoa

Easy to make, really moist chicken, my family (young kids) loved it! Added a bit of garam masala, cayenne pepper, salt and pepper for extra zip. Forgot to add some fresh spinach at the end. Overall, a healthy, low fat, and nicely balanced dish.

Chicken with Garlic, Basil, and Parsley

Delicious and easy! I used fresh chopped basil and parsley from my garden, and garlic salt since I was out of fresh garlic. Sprinkled a little parmesan on top of the tomato and gave it a few minutes under the broiler before it was done. My husband also loved it! Comforting home cooked Italian flavors. Low fat, too.

Awesome Baked Sea Scallops

So easy and so tasty! A little too much garlic for me, tho, or could have been my own error (10 cloves for a double batch). I think I'll try making my own breadcrumbs next time to give it more texture. It was a great side entree to latkes with guests for Hannukah.

These got gobbled up quickly! The cheese does melt out of the bun fast so be careful it doesn't get burnt and stuck to the foil.
