Fried Empanadas
These are the closes I've seen to my mothers. Please give yourself the time to make them as it seems like it took a while, perhaps b/c I kept checking the laptop to be sure I did everything. I added 2 microwaved baked potato cut into small pieces to the mixture. I would also recommend adding more salt. The next time I make the dough I'll roll it out thinner b/c the way I had started them it was kind of thick . I may also try the oven as suggested. Oh, I also enjoyed a miller light for the cook. :)

I have not even waited the 2 hours before I had to taste it. I used Hellmans b/c that is what I had and had eyeballl the rest b/c had 10 oz of coleslaw--- but really very good and I imagine eating more than 1 serving. ;)

Slow Cooker Chicken Taco Soup
omg.. can i just say that i did not have enough time to use the crock pot and simply cooked the chicken first and added all the ingredients to a huge pot and "whala" after maybe an hour I went ahead and served it. IT was still great. so the next time I did cook it in the crock pot and it was EVEN better. I have no complaints. delish!
