Peanut Butter Noodles

Wow! This was SOOOO good and SOOOO easy! I used ground ginger (since it was on hand), reduced fat peanut butter, and whole wheat spaghetti noodles and added cubed chicken and fresh mint and cilantro at the end. I'll definitely be making this again! Thanks Amy!!

Easy Batter Fruit Cobbler

So incredibly easy and delicious. I even made it with Splenda and reduced fat butter and you couldn't tell the difference at all. I'll definitely be making this again.

Cajun Crawfish and Shrimp Etouffe

Used 1 can of diced tomatoes, cooked chicken since I didn't have crawfish, and omitted the hot sauce and pepper (didn't want to scorch my guests) and this was a HUGE success!! My kitchen smelled like Acme Oyster Bar, it was great!

Veggie No Boiling Lasagna

This was my first attempt to make anything vegetarian and it was a great success! I didn't even miss the meat!! I did add an extra zucchini, used a red onion, and added mushrooms and a package of fresh spinach, all of which I drained after sauteing (sp?) to keep the lasagna from being too runny. Also, I didn't need all of the cheese mixture as I was running out of room in the pan. Super easy and everyone at my dinner party requested the recipe, even the meat-lovers!

Pumpkin Cheesecake Squares

Cut the squares BEFORE cooling!!! I made this for a work luncheon and it was a disaster, but only because the crust/cookie was like (attempting) to cut through a layer of bricks. I cut one batch before it chilled completely and it cut perfectly but once I chilled it to set the cheesecake, it was impossible to slice. What I was able to rip from the whole cake still tasted great but was just too difficult to slice to make it a success.

Banana Pudding IV

I made this for my hubby for V-day since banana pudding is his favorite. The flavor was good but entirely too thick for our taste. And even though I left the cream cheese out for hours, it still did not cream well and left lumps in the finished dish.

Oven Fried Chicken IV

The flavor of this dish was great but turned out SO dry. I did use boneless, skinless chicken breast since that is what I had on hand so I'm sure that made a big difference. Any pointers on how to make it not so dry? I'd love to try this again if I knew it would be juicier. BTW, I think the sour cream mixture with all the seasonings would be a great dip!

Braised Balsamic Chicken

This was the absolute best chicken dish I've ever gotten from this site! My husband made it so you know it was easy and he followed the recipe almost to a tee. (I had to supervise.) By adding a bit extra olive oil, there was plenty of sauce to pour over hot pasta. Excellent!

Rich Chocolate Pumpkin Truffles

I used gingersnaps, walnuts, and pumpkin pie spice instead of vanilla wafers, almonds, and cinnamon. They turned out a bit too chocolately and not enough pumpkin-y for my taste, but have gotten rave reviews. (I'm not the biggest chocolate fan.) Next time I'd substitute some pumpkin for the chocolate.

Pumpkin Ice Cream

I first made this 4 years ago for a dessert contest at work and won the "golden spoon!" Since then, I've had several request each year to bring it back. Very easy! I use gingersnaps and walnuts and mix with Blue Bell, if you can get it.
