Good Old Fashioned Pancakes

I finally found my go-to pancake recipe! I absolutely loved it--and my kids did, too!! I followed the suggestion of others to add 1 tsp vanilla. And as I only had self-rising flour on hand, I omitted the salt and reduced the baking powder to only 2 tsp (as I noticed it called for more baking powder than other pancake recipes). Even with trying to guess the adjustments needed for the self-rising flour, they turned out perfect!

Power Cookies

While I really liked the flavor of this cookie, not to mention the healthiness, I must say following the recipe as is gave me granola, not cookies. But it was delicious granola!! I agree that it needs moisture to give it a better consistency. I added two egg whites to help the cookies stay together and 1/4 cup soy milk for moisture. I absolutely LOVED them with the egg whites and milk! With alterations, these are definitely 5 star cookies!!

Cavatappi with Spinach, Garbanzo Beans, and Feta

Really good recipe. Nice, simple flavors; an excellent light dinner. For a more filling entree, I would add a grilled chicken breast. Also, next time I might substitute great northern or cannellini beans for the garbanzo just for the smoother texture. Also, I agree with others that you should add the garbanzo beans to the boiling pasta because I think their texture should be softer. Overall, a very delicious and healthy pasta dish. To make it even healthier, I omitted the olive oil and used a little broth (maybe if I used the oil I would have given it 5 stars!). I added some hot sauce just to give it some heat, but I liked the recipe as is, too.

The Ultimate Pasta Salad

Instead of using red wine vinegar and seasoning, I just used my favorite red wine vinagrette and it was perfect. No additional seasoning needed. It got rave reviews and I was asked to bring it again!

Tofu Parmigiana

Artichoke Bruschetta

Fantastic!! I love artichokes, but I really adore the typical tomato bruschetta, so I added a drained can of chopped tomatoes (as that was all I had on hand). The canned tomatoes made the mixture so juicy that I cut down on the mayo, which really made it the perfect consistency (even without the tomatoes I don't think it would need all 5 Tbl). And the flavor was awesome!! I will definitely make this again.

Seared Tuna with Wasabi-Butter Sauce

Outstanding! I love seared tuna, but this sauce made it even better!! I used just a little over the tuna and then used the remainder to stir fry vegetables as an accompaniment. It was amazing and all my guests raved! All I had on hand was a sweeter white wine, and it really lent itself well with the heat of the wasabi. A wonderfully complex yet subtle sauce.

Real Hummus

A good, solid hummus recipe. I made it just as directed and it was delicious. It did not have as much garlic or lemon as other recipes I have tried so it was less pungent--the flavors were definitely more subtle. If you like the overwhelming garlic that is traditionally associated with hummus, you may want to increase it. However, if you prefer the milder varieties, this one is perfect!

Hummus III

I have been on the hunt for a wonderful, standard hummus recipe--I have tried making it numerous times before and was never fully satisfied with the result. I made this recipe following the directions exactly and it was wonderful! This is definitely my new staple.

Florentine Artichoke Dip

I absolutely loved it!! I followed the recipe to a T and it was a huge success. Everyone at the party loved it. I was trying to find the perfect spinach and artichoke dip so I made several different recipes and everyone concurred that this one was by far the best. The only alteration I will make next time is that I will use sour cream in place of the mayo--just a personal preference. However, the recipe 'as is' is delicious!
