Spinach Pie V

This was my first time using phylo dough so I need a LOT of practice! My 2 "rolls" deflated together into one "pie" looking thing. We cut it up like pizza, though, and it tasted FABULOUS! For my family, it only fed like 3 of us, though. It was that good! I will definitely make it again- maybe try adding ground beef and mushrooms. AND baking it in a pie pan! :)

Chewy Granola Bars

I used sprouted wheat flour for the white and pressed down hard when putting the bars in the pan. They were great! And are now a staple at our house! Much healthier than store-bought and best of all, free of HFCS (high fructose corn syrup)!!!!!

Bread Machine Spelt Bread

My bread rose up golden and lovely. I did use 1/2 sprouted spelt flour (I use either sprouted or soaked grains for nutritional value) and 1/2 white flour. I added 3 tsp. vital wheat gluten and changed the honey to 1 T. I also watched to make sure it had enough water since spelt can absorb extra water. It smelled wonderful while baking, and I'm so glad to have a recipe for the bread machine that I was able to utilize a sprouted flour. Thanks for sharing!

Cinnamon Chip Muffins

My picky son ADORED these! They aren't very remniscent of Amish Friendship Bread but are lovely, light, fluffy muffins- w/o much sugar! I am always looking for recipes that have buttermilk and honey so this is definitely a keeper! I did substitute melted butter for the vegetable oil. Very good! Thanks for sharing!

Powdered Sugar Cookies III

This recipe is amazing! I didn't press the cookies flat with a glass dipped in sugar (I was out of granulated and needed some cookies QUICK) so I just pressed them lightly with my fingers. My family doesn't like really crisp cookies so I didn't press them too much. Anyway, they turned out almost like Mexican Wedding Cakes- slightly sweet, sugar cookies that melt in your mouth. YUM!

Oatmeal Chocolate Chip Muffins

This recipe is really good. Even my picky 8-year old loved them! I adjusted the b. powder to 2t and substituted vanilla soy milk mixed with water for the milk(my youngest has a dairy allergy). I also added 3/4 t of cinnamon. I only had white sugar so I mixed 3/4 c of the sugar right into the recipe. Also, I omitted the nuts. The sweetened soy milk added some flavor and sweetness. You probably could vary the flavors using flavored liquid coffee creamer mixed with water, too. But you might want to reduce the sugar to 1/2 c. All in all a great recipe- very versatile and so good!
