Grandma's Butterscotch Pie

Great recipe - as others mentioned, a double boiler is not required. Changes: Subtracted 1/4 cup of sugar and used dark brown sugar. Used a vanilla bean to boost flavor. In the future I would use less salt, maybe reduce by half. I think the 1/2 tsp as indicated is fine if you use kosher salt. Poured into a graham cracker crust and bananas.

Blueberry Crumb Pie

Truly a perfect blueberry pie. If yours tend to turn out runny, try tapioca instead of flour in the filling.

Tom Ka Gai (Coconut Chicken Soup)

Very good - took the advice of another reviewer and added about 2 TBS of raw sugar. Added a half cup of brown rice to the bowl when I served it to round out the meal and everyone liked it.

Stroopwaffels I

Delicious! They can be made in a waffle cone maker and cut with a round cookie cutter. I yielded 24 three-inch waffels and about 8 2-inch waffels, which helps bring the calorie count way down. These are a lot of fun to make, and I think they're going to make a nice Christmas gift.

I only make these at Christmas, in part because they're a little fussy to make but mostly because they are the most incredibly delicious cookies ever and I could eat 10 at a time.

Lemon Cake with Lemon Filling and Lemon Butter Frosting

I made just the cake and the frosting and it yielded 13 cupcakes. I also added a small amount of yellow food color to the frosting. I am very happy with this recipe--I will make it again in the future and try the lemon filling as well.

Peanut Butter Pork with Spicy Dipping Sauce

I made the recipe as the instructions read, and it wasn't bad but I just have this feeling that the marinade and the dipping sauce should be reversed. The peanut butter mixture was very much like other peanut dipping sauces I've tasted and the dipping sauce had a large volume of vinegar in it, which made me think that it would have served better as a marinade. I think I will try this again, but reverse the sauces.

Hearty Breakfast Cookies

These are great. I like to add a mix of dried fruit and nuts--the combination just depends on what's in the cupboard. Today I made them with raisins, dried cranberries, walnuts, and some crystallized ginger. These are satisfying and a slightly healthier coffee snack than a muffin or donut.

Maryland Crab Cakes III

Loved it! I also did the green onion/red pepper addition and used only 1/2 cup of light mayo. They were delicious and the broiling method is so much easier and more healthful than frying. I'll make this recipe often.
