Gourmet Sweet Potato Classic

I made this with a 40 oz can of sweet potatoes (for the sake of time), but otherwise followed the recipe precisely. It was fabulous and extremely easy. I may also add coconut to the topping next time.

Matzo Apple Kugel

I reluctantly tried this because I had most of the ingredients (not matzo crackers) for a last minute brunch. It turned out fabulous and made my kitchen smell so wonderful. As for changes, I used regular crackers and grahams instead of matzo (not sure even what matzo are - perhaps unleavened?). I also used one pear and two apples to switch up the flavor. It took a bit of time to peel and core the fruit, but was otherwise extremely easy. Next time I will add a few nuts as well. Thank you for a new and interesting recipe to add to my "brunch favorites."

Whole Wheat Sweet Potato Muffins

i made the following substitutions, so these are very healthy: a combo of 1 c. blended oats & 1 c. whole wheat flour, applesauce instead of oil, reduced the honey to 1/2 c., milk instead of yogurt. also for the topping, cut all the ingredients in half, as i had way too much! this made 18 muffins and they cooked about 19 minutes. beautiful, sweet, and healthy!

Chicken and Pasta Casserole with Mixed Vegetables

this recipe is worth 5 stars because it can be modified to taste well. it is too dry on its own, and i recommend adding another can of soup or additional milk/sour cream. i also changed the vegetables - i included brocolli, peas, and mushrooms; and spices - italian seasoning with garlic/onion. this is also the perfect recipe to use with whole wheat pasta - as you can't taste the pasta. very easy to modify.

Strawberries and Cream Bread Pudding

i just threw in plussed up ingredients into a bigger pan, estimating the amounts. this turned out excellent. the key was adding fresh strawberries and melted chocolate chips to the top.

Magic Mango Bread

definitely worth making. i substituted "mango sauce" (similar to applesauce - available at some grocery stores include trader jo.s) for the oil to make it low fat, and this turned out to be a very moist, fruity bread.

Pear Bread II

i added chunky applesauce (instead of oil) and more pears (with the pears cut into decent sized chunks). this assured a terrific pear flavor in the bread. wonderful!

Raspberry Trifle

**one important note - LET THIS SIT OVERNIGHT so the cake absorbs the wet toppings, it is much better that way.** i am the office baker, so i regularly bring things in for folks to try. this recipe, however, blew everyone away. they raved about this one. the only change i made was to make more of the cream cheese/heavy cream mixture as other reviewers suggested. it was wonderful!

i liked this a lot, between 4 and 5 stars, but i would definitely recommend baking this with a "water bath". any cheesecake site will tell you how to do that.

i followed the recipe exactly and it turned out great. the flavor is not as perfect as some of the restaurant lava cakes, but it was still delicious and easy and beautiful and different. will definitely keep as a 5 star treat.

Carrot Cake III

whoa! unbelievable. i never just "buy" carrot cake, because it's not my favorite - i made this for someone who loves carrot cake and it was absolutely amazing. the pecans and the frosting make all the difference. i cannot emphasize the yum factor.

delicious!! very rich and chocolaty. a heavy cookie. i changed the recipe in two ways: 1. added no coffee 2. instead of 1 lb. chocolate, i added 6 oz. chocolate baking squares and a bag of milk chocolate chips

Orange-Glazed Asparagus

this gets a 5 star rating because it was very quick (about 7 minutes) and tasted delicious. i made the recipe exactly as it is and it turned out very well. i'm sure that adding pecans or other things would also be very good, but it is delicious without as well.
