Almond-Topped Fish

Very good! I left out the onions and the almonds (DH doesn't like either), and it was still quite yummy. I cooked these on the stovetop, so made a couple changes: Equal olive oil and butter in pan until very hot, put fillets in and sprinkled with dill, seas salt and pepper, then covered the pan. When the fish was opaque, I turned them, spread the parm-mayo-lem mixture on and continued cooking until flaky. Nice flavor and texture.

Sizzling Sherry Shrimp with Garlic

Amazing! I used the sherry, and I thought this recipe was perfect. I am a mildly spicy person, and it was not too hot at all to me; just the right amount of zing. The sauce was so good, I kept licking it off the spatula from the pan afterwards. My husband loved it too, he said it tasted like restaurant food. Lol! This is going to be one of our regular meals now. Yummy

Festive Turkey Meatballs

LOVE this recipe. I made these for a New Year's Eve party and everyone loved them. The ginger adds such an interesting flavor, they are so yummy and so easy to make. What people have said is true, this is a lot of sauce-- I make half, and do it loosely off of the recipe to taste--- less honey since we are low carb. This is also great to make in the skillet when it is too hot to want to use the oven. I just brown the meatballs in a little olive oil, when they are cooked about halfway I start adding the sauce to coat. Oh, and I know that I don't like curry so I leave that out.

Slow Cooker Lentil and Ham Soup

This soup is awesome! Having it again for lunch today. I made it just as the recipe stated, except I put it in the crock pot on high, I lost track of time because of doing other things, but I think it was done at about 3.5 or 4 hours. Great to make over the weekend and take for lunch during the work week!

Downeast Maine Pumpkin Bread

I've made this several times, and I've become famous for it. Moist, flavorful, delicious every time. I don't have loaf pans this size, so I've made muffins, big loaves and mini muffins. I just keep an eye on them, when the middle has stopped looking doughy, it's time to check one every 5-8 minutes or so. Always a success, always yummy, and very easy.

Lemon Square Bars

After reading all the reviews and modifications, I was so confused as to what to do! I gave up and made it as is.... it was wonderful. Sweet and tangy, the crust was golden and crispy, they were excellent. So, do yourself a favor and DON'T read all the reviews and make a bunch of changes. This is a great, easy recipe I'll be making over and over again, because they're addictively yummy! One tip: when spreading the crust, put it in the pan in a lump and use a sheet of plastic wrap and your hands to smooth it out. It's really fast, doesn't stick and there's no mess.

Ashley's Chocolate Chip Cookies

I was looking for a good recipe that used milk chocolate chips, and this is it! After reading the reviews, and since I don't like cak-ey cookies, I left out the baking powder. I also accidentally left out the baking soda (oops!), but they were delish and I'm not sure it would have been a big improvement. I followed someone else's advice and took them out when the edges had a little color-- about 10 minutes for me. Slightly crispy edges, soft centers, just like I like 'em! Yum.

Microwave Caramel Popcorn

This recipe is amazing. I work full time and have a full time job with my family, so cooking usually takes effort and energy I don't have. This is fast and easy and YUMMY! The only thing I changed is reducing the butter by 25%. It was still delicious, I'll be making this again and again through the fall and the holidays.

Pumpkin Chiffon Pie II

There is WAY too much clove in this recipe! It totally eclipses all of the other flavors. Also, we could really taste the bite of the sugar free pudding, even with all of that clove. I think that half the clove, and maybe some Splenda might make it better in the future. As is, just not anything to get excited about.

Twice Baked Sweet Potatoes with Ricotta Cheese

These were so delicious, they were the talk of the table! I used part of a sweet onion instead of shallots, and omitted the sage. Helpful tip: when you go to remove the innards after baking, if you just squeeze gently around the skin, the potato pops right out! No scooping needed ;) Lovely addition to a Light Thanksgiving!

Grandma's Green Bean Casserole

This was a hit, with some changes to make it a lighter version. I left out the cheese, as well as all of that butter and cracker mess that I'm sure is delicious, but just not necessary. Instead, I used one SMALL can of the french fried onions (500 calories in the small can alone), and it was delicious! If you already like green beans, you really don't need to go out of your way to dress them up.

Applesauce Raisin Bars

First of all, I have to say that I made a lot of modifications. I was looking for a healthy cake/bar with applesauce that we can eat as a family for dessert, and not blow a bunch of calories! This turned out to be a good starting point. I used turbinado sugar (same sweetness as processed, but comes in crystals--still has that molasses flavor, but lighter). We had some leftover cinnamon applesauce, so I used that, and the little bit of extra cinnamon was great. Instead of raisins, I chopped up half of a big gala apple (skin on, important vitamins) and used about a third of a cup of chopped walnuts. I also used 2/3 whole wheat flour, instead of all white. That said, it's a delicious, moist bar with a wonderful flavor, and I think the apples and walnuts make it much more satiating, too. It's also very quick and easy to make, popped it in as I was making lunch. The only reason I didn't put 5 stars, is because I made so many changes and didn't leave it as-is.

Jesse and Steve's Fresh Strawberry Cake

I have mixed feelings when it comes to this cake! It was very moist and delicious, and the sweet and tart lemon icing was a great compliment. I just don't think it's "wow your socks off" good. I made it to take to my boyfriend's parents' house for the 4th of July, and instead of the almonds I sprinkled blue sugar , and then with the pale lemon icing and slices of strawberry on top, it was easily patriotic. I think it's a nice cake to make for the family, but not something to pick if you're trying to impress.

Carrot Cake III

I just made this tonight for the first time, and it was so good that I had to hop right on and review it. Easy recipe, easy to make--although next time I plan on buying shredded carrots, as I am never grating them again! The cake was done in exactly 40 minutes, and as it cooks it acquires this heavenly slightly crisp outer layer. In my opinion, the icing isn't even needed, and if you exclude it you will cut out a bunch of calories and still have a delectable treat! Everyone loves it, huge success ;)

Linguine with Chicken and Sauteed Vegetables

This was so fantastic, I can't wait to make it again! The chicken had such good flavor, and everything together was perfection. The only change I made was to omit the cilantro (personal preferance). I was unsure about the amounts of soy sauce, but it turned out just right. YUM!

Hummus III

This is the first time I've made hummus, and I must say that it was simple and very flavorful. I found that it was FAR too salty, and the second time I made it, added no salt, and the salt from the garbanzo beans was plenty. I also saved some bean juice to add while blending, and also added a dollop of olive oil. Even better the next day or two, this has become a staple in our house! EDIT: After making this for ages, I've discovered that if you add more bean juice while blending, it's a good idea to add a splash more lemon juice, since the bean juice kind of makes it not as potent. LOVE this hummus, it's become a staple in our house!

Cinnamon Nut Cake

Tasted like yellow cake with cinnamon and nuts! All in all, it was pretty yummy, and we liked it better the second day. The only problem I had was that the layer of the cinnamon nut mixture did not stick to the top or the bottom very well at all.

Simple Scones

These scones are DIVINE! They are moist, flaky and have an amazing texture. You can add whatever you'd like to keep it interesting, my favorite is the zest of two oranges and substituting the raisins for dried cranberries. YUM!
