Boston Baked Beans

I have made this twice now. It's amazing! I usually take a shortcut and use canned navy beans. 6 14.5 ounce cans Navy Beans is about the same as a 2 cups dried beans. I rinse the beans well and then follow the recipe as written. That is really the only change I've ever made. Everyone loves these and they are delicious as left overs as well. Perfect to take a long to a pot luck or BBQ!

Roast Sticky Chicken-Rotisserie Style

Made this today. It's been in the oven all afternoon, roasting away. The skin is a nice crispy golden brown. I basted it with the juices in the pan as well. Delicious. If you'r looking for a new way to bake a chicken, this is it!

White Chocolate Raspberry Cheesecake

I have made this 2 times in the past 2 weeks. I make it gluten free by using gluten free chocolate cookies for the cookie crumb crust. Everyone absolutely loves this cheesecake! I didn't really change anything else in the recipe except the cookies. Also, used 2 cups cookie crumbs, 6 Tbls white sugar and 1/2 cup butter for the crust so that I could have crust up the sides of the pan. I garnished the cheesecake with fresh raspberries and shaved white chocolate.

Fluffy Pancakes

Better than bisquick any day of the week! I made them gluten free by substituting Gluten Free Mama's Almond blend flour for the regular flour. It doesn't get any better than this!

Salisbury Steak

We loved this! I scaled it down to 4 servings. It's just my hubs and I and we'll eat the other 2 servings for lunch tomorrow. The only other change I made was to substitute corn starch for the flour and to use gluten free bread for my bread crumbs. I loved the tangy burst of flavor the sauce provides. Yum!

Enchiladas Suizas

Love this! The Salsa Verde is out of this world! I ended up having to make it as a casserole instead of enchiladas since I was out of corn tortillas. I used tortilla chips and layered them with the chicken, salsa verde and cheese ending with a layer of cream and then the remaining cheese. Can't say enough good things about the salsa verde!

Pumpkin Gingerbread

Awesome! I converted it to gluten free by using Gluten Free Mama's Almond Blend flour. Also added about 2 1/2 teaspoons guar gum to help replace the missing gluten. Oh and since I had some, I added about 1 teaspoon fresh grated ginger. I baked it in a pampered chef fluted bundt pan stone. Yummy!

Strawberry Coffee Cake

The only change I made was to use gluten free flour (Gluten Free Mama's Almond Blend). Oh, and I had to use whole frozen berries that I defrosted slightly and then sliced. Other than that, I didn't change a thing. This was awesome with a steaming hot cup of coffee. I am going to make this again and try it with blueberries or maybe even peaches. But, it's awesome just the way it's written.

Korean BBQ Galbi

I have made this a couple times and it's super yummy! Made it exactly like the recipe states and it drew 2 of my neighbors over to find out what I had on the grill that smelled so good! I always make extra so that we can have it again for lunch the next day.

Chunky Cheesecake Brownies

This is a fudgy delicious brownie recipe. I converted it to gluten free by substituting Mama's Gluten Free Almond Blend Flour. I also used dark chocolate chips, becuase that's what I had on hand. These are so rich and chocolatey! I will definetly make these again. I may try to add some chopped cherry to the cheesecake layer next time.

California-Thai Flank Steak

This is pretty good. I'm not crazy about the cooking method. I just cooked it right on the grill. I also used 2 cloves fresh garlic instead of garlic salt. I do feel like it's missing fish sauce though and next time I make it I'll slip some in. It did smell fabulous on the grill. Reminded me of street vendors!

Beef Tips

I made this tonight and it's a it. I had to convert it to gluten free in order to eat it. Here's what I did: eliminated the packet of gravy mix as it's not gf. Tossed the beef with gluten free flour seasoned with garlic pepper. Also used fresh garlic instead of garlic powder. I served it with some gluten free pasta and it's absolutely delicioius!

BBQ NY Strip

This marinade totally rocks! I used it with Ribeye steaks, because that's what I had in the freezer. I didn't change a thing as far as the recipe is written. I used the Weber brand Chicago Steak seasoning for the steak seasoning. Regardless, this recipe is awesome. It lends a great flavor to the meat, without over powering the beefy taste of the steak.

Mariu's Spaghetti with Meat Sauce

I thought this was pretty good. It's very "beefy" tasting and has a sort of rustic quality to it. It doesn't sport a bold tomato flavor. I almost feel like it would greatly benefit from adding some more herbs and crushed garlic about 15 minutes before it's completly finshed cooking.

Quick Baby Back Ribs

I made this tonight exactly as written. It was totally delish! I think it needs something though. Maybe some crushed garlic rubbed on the meat before the rub. However, this is great exactly the way it's written. Oh, and for the BBQ sauce I used Sweet Baby Rays.
