Nectarine Pie

Yum! Here is a hint to help get the skins off easier. Before you put the fruits in the boiling water cut a small X in the bottom with a pairing knife then after blanching them in the boiling water and cooling them you can just peel them like a banana.

Creamed Cabbage

This was really, really good! It's the middle of summer and cabbage is chep but hubby doesn't like coleslaw and corned beef and cabbage doesn't seem right in July so I tried this recipe and between 2 adults, 1 teen and 2 toddlers we polished off the whole big bowl! Now I did add an extra strip of bacon cause c'mon, it's bacon! but aside from that I followed the recipe exactly and sooo good, everyone loved it!

Oven-Roasted Root Vegetables

This was so good and so easy! I used sweet potato, sweet onion, turnips, parsnips and carrots. Be sure to check it before the time because mine were done early. Use some aluminum foil to line your pan and no clean up.

Smashed Red Potatoes

This was a nice change from regular mashed potatos. Instead of just olive oil I used 2 Tbs. extra virgin olive oil (very important to use extra virgin) and 2 Tbs. butter. This turned out very nice the butter was familiar and the olive oil added a nice earthy taste. I also added a smidge of garlic powder but you could probably cook the potatos with a couple cloves of fresh garlic if you wanted to.

Savory Swiss Chard with Portobellos

Joe's Special Scramble

Ok, first of all as a child my dad used to tell us he made this recipe up in the Air Force when he was in charge of cooking which I know now is total bogus (thanks dad). Now, I always loved this dish but it is better made with fresh spinach, saute the mushrooms with some butter seperatly and then you can top with some shredded cheddar or parmesan cheese and season liberally with salt and pepper. Pretty good and pleasing all around with some practice and something that as a kid we all looked forward to and as an adult is still fun to make. Can also be done with sausage for a different taste.

Awesome Easy Pasta

Really good but due to the previous reviews of thin sauce I made adjustments but kept the ingredients the same. I rendered the bacon in a pan and set aside on towel, reserving a few (4-5) tablespoons of bacon grease whisked in 2 tablespoons flour and whisked for 30 seconds. Added 1 1/2 cup chicken broth and simmered for 2-3 minutes until thick, added 2 cups half and half and the chicken and simmered for 10 minutes and added the peas and the cheese, crumbled bacon, and salt, pepper and garlic powder. Very good, thick sauce.

Tomato Chops II

Really good! I omitted the green peppers because we don't like them and I used spaghetti sauce just because I didn't have plain tomato sauce and I simmered it for about 45 minutes to get the meat really tender and it was super good and everyone loved it! So tender, no knife needed.

Turkey Shepherd's Pie

This was really good. I like that I had everything on hand to make this and it was healthy (not low calorie but healthy) and my family really liked it. I didn't use the chicken bouillon, instead I used worchester sauce and I grated some Asiago cheese on top of the potatos for added flavor.

Turkey Meat Loaf

I've never made turkey meat loaf before and this was a pretty good recipe. I had some left over rosemary artisan bread that I used but I did not add the cheeses just because I didn't have any on hand. Next time I might pulse my bread in a food processor to get finer chunks as well as the onion. Very nice though and a great recipe for experimentation.

Turkey Cutlets with Tomato Sauce

This was very good and used items I had on hand. I used a cup of diced canned tomatos instead, increased the mushrooms and omitted the lemon juice. After browning the cutlets I added them to the sauce, covered and continued cooking until turkey was cooked through. I pre-seasoned the turkey with salt, pepper and garlic powder before cooking and the sauce reduced down a bit during cooking to intensify the flavors. I would definately make this again.

Pueblo Stew

Originally I gave this recipe 3 stars but my husband and son said it was definatly a 4 though I wasn't as wild about it as they were. I halved the recipe and omitted the jalapeno's just because I'm not a fan of spicy, the queso fresco was delish on top. Anyhoo, since these are not ingredients I usually keep in my pantry I don't know if I would go through the trouble of making this again but on the otherhand I'm sure it is a fabulous recipe with some practice.

Custard Pie III

Great quick dessert pie made with simple ingredients you probably have in your pantry. I like that it's sweet but not too much so and it is a nice change of pace from a fruit type pie. This would be nice for a brunch, even made into individual tartlets for guests because it isn't too rich. Very good recipe. I also dusted mine with a mixture of cinnamon and powdered sugar.

Banana Bread

This was a really good recipe and everyone liked it. I made a couple changes though. I used coconut oil instead of the shortning for the health benefits and spiced it up with some vanilla and cinnamon. Finally, I added a couple tablespoons applesauce just cause it was kind of dry and I felt it needed a bit more moisture.

Pesto Polenta Lasagna

I doubled this recipe to feed 8 people and it was very good! The Trader Joe's polenta I used was pretty salty so I would advise against adding any extra salt to this dish. Very good, easy and economical and perfect for a vegetarian dish. I would give it four and a half stars if I could.

Fabulously Sweet Pear Cake

Great recipe to play with. I made changes to make it a bit healthier. I used 2cups white flour and 1 cup whole wheat flour and instead of oil I used 1 cup unsweetened applesause, I added a teaspoon or two of cinnamon and a dash of nutmeg and and a squeez of lemon, finally I halved the sugars to 1/2cup each and baked it in a bundt pan. Even though I lost track of time and slightly over cooked it, it still tastes great- very moist and flavorful, this would taste really good warm with a scoop of French vanilla icecream.

Quick Chicken Stew

This was quick and easy for sure. I ended up using some small red potatos, carrots and onion instead of everything else and it turned out great. I cooked it longer on order to allow the carrots and potatos to cook through. I served with biscuits for a simple, week night dinner.

Easy Barbecued Pork Chops

Really good recipe and super easy too. I had all the ingredients on hand and it cooked all in one pan. I omitted the green peppers because I don't like them and it was still really good. I served with biscuits and baked squash for a great autumn night dinner.

Dang, this was yummy! I used turkey cutlets instead and halved the red pepper flakes just cause I have little kids. I probably simmered the sauce a little longer and it reduced down and made an amazingly flavorful sauce!

Cream of Cauliflower and Stilton Soup

Such a great, luxurious soup. I used butter instead of vegetable oil and cooked everything up together then pureed 2/3 of the soup and hand mashed the rest using a potato masher and finally jused used half and half instead of the heavy cream and milk. So deliciouse however if you are not a "stinky cheese" person you probably won't love it but if you're like me and think stinky cheese is the bomb then I'm pretty sure you're gonna love this.
