Wow, really good recipe. I cooked the noodles the night before and threw them in the fridge then put it together the next day. I actually only used 1/2 pound of mozzarella because I had so much filling. I actually made one 9x13 pan full and then an 8x8 pan to freeze for later(you may need extra sauce to do this). I would recommend you not use tofu in water, buy the dry packaged stuff if you can otherwise it has too much water. I loved the recipe because the tofu blends in with the other ingredients so you don't taste it and though I love tofu my boys don't and they couldn't even tell it was in there but it lightened up the dish and made it healthier. Like I said, I used only half the mozzarella and added pepper, parsley and thyme. I would make this again and if you are trying to sneak tofu or soy into your families diet this is a great recipe to try.
