Chicken and Dumplings III

Ok so I admit, I used this recipe as a base for my leftovers. I had some thyme roasted chicken and vegetables (celery,potatoes, carrots and onion)to use up from the night before. I also used cream of mushroom soup because thats all I had. I mixed the liquids with a bit more broth and added the leftover veggies and chicken and brought to a boil. I added the dumplings and cooked till done and wow such an easy and economical dish that my husband described as "rich" and it was a total hit. So though I modified the recipe this was a great base recipe that I will keep.

Simply Sensational Strawberry Shortcake

Really tasty shortcake recipe for when you don't have time to cook it up from scratch. I don't usually use these shortcut ingredients but in a time pinch they worked well. I couldn't get the cake part very fluffy but it was still yummy and the whole family enjoyed it and it was a fun, quick alternative for a birthday cake. Would also work great for a summer dessert since spoilage isn't such a problem.

Lasagna Roll Ups

Wow, really good recipe. I cooked the noodles the night before and threw them in the fridge then put it together the next day. I actually only used 1/2 pound of mozzarella because I had so much filling. I actually made one 9x13 pan full and then an 8x8 pan to freeze for later(you may need extra sauce to do this). I would recommend you not use tofu in water, buy the dry packaged stuff if you can otherwise it has too much water. I loved the recipe because the tofu blends in with the other ingredients so you don't taste it and though I love tofu my boys don't and they couldn't even tell it was in there but it lightened up the dish and made it healthier. Like I said, I used only half the mozzarella and added pepper, parsley and thyme. I would make this again and if you are trying to sneak tofu or soy into your families diet this is a great recipe to try.

Spanakopita II

I tried this recipe out to bring with me to a cocktail party and though they were a success, I thought they were a little bland surprisingly. I followed the advice of other reviewers and used a pizza cutter to cut these into strips which worked really well and then I used spray olive oil to speed things along and this worked fine but the final taste would have been better with butter. Give yourself plenty of time to make this dish and factor in thaw time for the dough and adequate cook time. I would try these again but kick up the flavor a bit.

Sour Cream Pork Chops

OMG! I really loved this recipe for a couple of reasons. First, pork chops can be so hum drum and borring. This is a great way to do something new with your chops. Also, any recipe this tasty and easy that I can do in the crock pot is a hit with me. I would only make one change and that is to double the sauce so there is more of the best part to spoon over rice. This was a big hit with the whole family and I have added it to my favorites.
