Custard Pie III

Great quick dessert pie made with simple ingredients you probably have in your pantry. I like that it's sweet but not too much so and it is a nice change of pace from a fruit type pie. This would be nice for a brunch, even made into individual tartlets for guests because it isn't too rich. Very good recipe. I also dusted mine with a mixture of cinnamon and powdered sugar.

Anniversary Chicken I

How to make this less fat: You can get away making this dish with less fat but the flavor is still great. I use real bacon but about one slice per serving. I use just a sprinkling of soy sauce per breast and brush with low fat ranch and just sprinkle with shredded cheddar and the green onions. Still a little fattening but not quite so bad but still totally delish! Also I cut the breasts in half and pound to about 1/2 inch thick which speeds cooking time and makes the breasts really tender and streches the servings. A favorite dish that really makes anynight special.

Lemon Cream Pasta with Chicken

Probably more of a 4 and a half stars but really yum! I followed the recipe exactly except that I just sqeezed 1/2 the lemon onto chicken to bake and 1/2 into broth. Also at the end I added about a half cup fresh grated parmesean cheese and about 2 tbs. minced Italian parsley just before serving and it tasted great. You will be surprised at the creamy lemony flavor and how fresh and light it tastes. I just served with some green peas and a favorite wine for a deliciously different dinner.

Easy Deviled Chicken

Super easy and flavorful, the coating keeps the chicken breasts moist and really adds a great flavor. I used seasoned bread crumbs and it turned out well but I would be curious to see how it would taste with the stuffing mix. My picky hubby said this was a keeper.

Butternut Squash Soup II

This was a good way to use butternut squash but we found it a little bland. Perhaps a bit of cream or butter but then it wouldn't be low fat. Overall though, pretty good.

Best Fried Green Tomatoes

First time I've ever made these but mom-in-law gave me a bunch of green tomatoes so figured it was a good way to use them. Everyone loved them, they were so good served with a little sour cream. I reduced the salt because I used seasoned bread crumbs and then kept them warm in the oven until serving time. I served them with chicken chili as a side and they were delish!

Chicken Salad Spread

Really good. I used leftover baked chicken which I diced up and combined with the other ingredients (except I omitted the pickle) and packed it in little containers with bread stored in a separate ziplock bag and packed it in my kid's lunch and they loved it. Great way to use up a little lefover chicken.

Marie's Easy Slow Cooker Pot Roast

This is a winner. Super tender beef and flavorful veggies make this a keeper and so easy to prepare. I seared my roast in bacon grease for added flavor and this cooked up so yummy and moist and tender.

Baked Slow Cooker Chicken

Great way to roast a whole chicken without fuss. Meat just falls off the bone which also makes this a great way to cook a chicken if you plan on making a soup or storing meat for recipes. The chicken is so moist and tender and you can really add any seasoning you like.

Easy Barbecued Pork Chops

Really good recipe and super easy too. I had all the ingredients on hand and it cooked all in one pan. I omitted the green peppers because I don't like them and it was still really good. I served with biscuits and baked squash for a great autumn night dinner.

Mom's Italian Beef Barley Soup

I loved this recipe as a base for your own creation. I only had one pound of Angus beef so I added two medium peeled potatoes and it was great. If you really like barley like I do this recipe uses quite a bit. You could add any vegatables you have on hand and your favourite spices, this is a fun and basic recipe to play with. I was short on time so cooked on low for 3 hours then high for the last hour and it was perfect. So for a recipe with so few ingredients with such versitility I give it 4 stars.

Skillet Ham, Cabbage and Potatoes

This was a great week night dinner that is great for playing with. I had a little bit of ham so I added some Polish sausage and I used about a half can of chicken broth instead of the water and half a large head of cabbage. Everything tured out delish and my boys ate it all up. I served it with some sourdough rolls and it was great. I do have to say that I prefered the ham over the sausage having used both in the recipe. The ham had a better taste and texture so I'll use all ham next time.

Chicken Pot Pie IX

Tastes how a pot pie should taste! I added potatos instead of celery and used store bought crust. I cooked the veggies in the broth first then removed veggies and made the sauce as directed and this worked well. Also used fully cooked chicken and added at the last minute with veggies and I really loved this recipe. You can play with seasonings by adding what you like, I added garlic powder. I wanted to post a photo of how pretty this turned out.

Greek-Style Rib Eye Steaks

Super good and easy. I had some small steaks in the fridge and some feta cheese so I put them together with this recipe. The rub was super yum, I adjusted it for my personal tastes and omited the olives just because I was out and didn't want to make a trip to the store. After the steaks were cooked I put them on a plate and topped with the cheese and put a lid over them just to warm and soften the cheese a little bit...mmmm, tasty!

Beef Cabbage Stew

I really liked this recipe and am happy to find something new to do with cabbage. The long cooking time really made the beef super tender and the taste was really good. I did have to make some changes, I had to add more water because even covered mine boiled dry also I didn't have have tomato sauce so I used canned spaghetti sauce and that worked just fine. Served with dinner rolls and you have a complete meal.

Dad's Hamburger Gravy

I gave this 5 stars because though it's such a simple dish, it is so cheap and easy so flavor is good but excellent bang for the buck. I serve with home made buttermilk biscuits and a vegetable and that's a pretty balanced, quick and easy dinner.

Easy Devonshire Cream

Ok, so though I gave this 5 stars I had to make a change because of my own bad planning. I forgot to get enough cream cheese so I ended up using 4 ounces of sour cream instead because I figured it would work as well and I am happy to say it did. My cream had perhaps a bit more zing than if I had used cream cheese but it tasted really good anyway. The whip held up amazingly, unlike regular whipped cream that quickly goes back to liquid, this remained thick. I served it with scones and fresh sweetened sliced peaches-yum!

Grandma Johnson's Scones

As far as scones go, these are great! Mine had some trouble browning so I turned up the heat for the last little bit of baking but these were very light, flakey and a little sweet. I've tried a ton of scone recipes and these were one of the best, not as heavy as some. I served with devonshire cream and sweetened sliced peaches for Father's Day breakfast and they were a hit, leftovers were re-heated and served with strawberry freezer jam-yummy!

Chicken and Dumplings III

Ok so I admit, I used this recipe as a base for my leftovers. I had some thyme roasted chicken and vegetables (celery,potatoes, carrots and onion)to use up from the night before. I also used cream of mushroom soup because thats all I had. I mixed the liquids with a bit more broth and added the leftover veggies and chicken and brought to a boil. I added the dumplings and cooked till done and wow such an easy and economical dish that my husband described as "rich" and it was a total hit. So though I modified the recipe this was a great base recipe that I will keep.

Simply Sensational Strawberry Shortcake

Really tasty shortcake recipe for when you don't have time to cook it up from scratch. I don't usually use these shortcut ingredients but in a time pinch they worked well. I couldn't get the cake part very fluffy but it was still yummy and the whole family enjoyed it and it was a fun, quick alternative for a birthday cake. Would also work great for a summer dessert since spoilage isn't such a problem.
