Fabulously Sweet Pear Cake

Great recipe to play with. I made changes to make it a bit healthier. I used 2cups white flour and 1 cup whole wheat flour and instead of oil I used 1 cup unsweetened applesause, I added a teaspoon or two of cinnamon and a dash of nutmeg and and a squeez of lemon, finally I halved the sugars to 1/2cup each and baked it in a bundt pan. Even though I lost track of time and slightly over cooked it, it still tastes great- very moist and flavorful, this would taste really good warm with a scoop of French vanilla icecream.

Slow Cooker Italian Chicken Alfredo

I didn't like this as much as I'd hoped. The cream cheese made it kinda bland. If I made this again I might need to tweek it a bit. On the bright side my toddler twins gobbled it up.

Greek Lemon Cake

Liked this recipe but the directions left me grumpy. Most mixers come with a small and large mixing bowl. For the egg whites you should use the small mixing bowl and reserve the large bowl for creaming the butter and adding the dry ingredients to. I followed the directions to use a large mixing bowl then only had my little bowl to do the rest of the work. I served with strawberries and whipped cream for a lovely Easter desert.

Easy Honey Mustard Mozzarella Chicken

Meh, it was ok. Used a dark mustard and for speed I cooked the bacon in a pan and then put it on for the last few minutes of cooking with the cheese and though everyone ate it (except my toddlers) I probably wouldn't make it again.

Cream of Cauliflower and Stilton Soup

Such a great, luxurious soup. I used butter instead of vegetable oil and cooked everything up together then pureed 2/3 of the soup and hand mashed the rest using a potato masher and finally jused used half and half instead of the heavy cream and milk. So deliciouse however if you are not a "stinky cheese" person you probably won't love it but if you're like me and think stinky cheese is the bomb then I'm pretty sure you're gonna love this.

BREAKSTONE'S Curried Mashed Sweet Potatoes

Great way of making sweet potatos exciting. The curry smelled wonderful and the sour cream added the right amount of creaminess and zing. My toddlers ate these up as did my teens and the hubby. Served with brown rice and a simple marinated chicken breasts for a quick and healthy weeknight dinner.

Spicy Black Bean Empanadas

Super tasty but also really time consuming to make. I had about 15 guests and had a ton of these little guys left over but no worries, my teenage boys ate them all after the party. Super yummy with the guacamole and sourcream. Also I didn't add the red pepper flakes because I had breast feeding moms in attendance and didn't want to make trouble for them lol. Anyhoo, really yummy but give yourself pleanty of time to assemble these.

Sparkling Punch

This was a really nice punch, not really strong and just really pretty and fizzy. I was afraid that I would have a bunch left over since I only had about 13 people to serve but nope, it all got guzzled down by my guests even though I also had tea and coffee offered. Great recipe. If you have more thatn about 15 people you will probably want double the ingredients on hand since this will be a hit.

Best Guacamole

Fabulous! I've never made guacamole before even though it's one of my favorite things to eat and I have high standards for my guac. This was so easy, fast and most of all, delicious. Like others I added some minced cilantro and some diced tomatos for added color. Letting it sit for an hour or 2 in the fringe will ensure it doesn't taste lemony so be sure you make it a little ahead of time. Sooo good!

Cranberry Orange Bread

Yum! I tried making these into mini loaves and I left them in the oven for 35 mintues which wasn't enough time but the loaf I made in a regular size loaf pan was wonderful so I'll have top play with the time on the mini loaves (they sunk since they were undercooked, booo). I added a cream cheese frosting to the loaf and served it as part of a brunch and it was so moist and yummy, just perfect tart and sweet, mmmmm. The only thing that would have made it more wonderful is if I added some chopped candied orange peel to the frosting.

Buffet Meatballs

These were really yummy and people were really surprised when they asked what was in them and I told them. Strangely some people thought I added chili pepper to them because something in the sauce brought out some kick in the Costco meatballs I used but not really spicy, just a little kick. I did not have to throw any away and they were gobbled up.

Downeast Maine Pumpkin Bread

Great simple recipe for a spicy pumpkin bread. I made some changes to simplify the recipe for me though. I used half vegetable oil and half apple sauce then I used 3 tsp of pumpkin pie spice and then baked 2 5X9 loaves and had a little batter left over so I made a little baby pumpkin cake (cute) with the left over. I had to bake the larger loaves about 15 minutes longer. Very moist and flavorful!

Cheddar Buttermilk Biscuits

Oh my heck, these were the best biscuits I've ever made and I make alot of biscuits. I omitted the cayenne and probably came closer to undercooking these than overcooking them so they were just light golden brown and I made them really big. Oh man soooo good I think I'll write this one down and replace my Betty Crocker recipe with it!

Honey Curried Roasted Chicken and Vegetables

This was so delicious! I followed the one reviewer who simply oven roasted the veggies first, set aside and roasted the chicken then the last 20 minutes tossed it all together in the oven with the glaze then served. It's true, you will want to double the glaze and the veggies because they are so incredable please note I omitted the onion and just used garlic powder because I was feeling lazy but it didn't affect the outcome as far as I'm concerned. Hubby couldn't stop praising this one, its a keeper for sure.

Fast and Delicious Black Bean Soup

5 stars just because this recipe is so versitile. I used left over shredded pork instead of ham and added an extra carrot and more broth and more cumin. Really tasty and easy! Served with the buttery corn bread recipe on this site.

Slow Cooker Carolina BBQ

I had really high hopes for this recipe but I just didn't love it. I'm not into really spicy food so I halved the spices and even then it just seemed off. However I was able to redeem the recipe by adding a touch of my favorite bbq sauce before serving on a bun and thanks to the spices it still had some heat. I plan on using the left over (w/o bbq sauce) in a black bean soup. On the bright side this recipe did yield a very tender and jucy pulled pork but just not the flavor I'm used to.

Turkey Meat Loaf

I've never made turkey meat loaf before and this was a pretty good recipe. I had some left over rosemary artisan bread that I used but I did not add the cheeses just because I didn't have any on hand. Next time I might pulse my bread in a food processor to get finer chunks as well as the onion. Very nice though and a great recipe for experimentation.
