Creamy Pesto Chicken and Bow Ties

This wasn't a hit with the adults, but the kids loved it. Oddly, it didn't taste like much of anything (I used a good quality, simple recipe pesto- maybe that's where it went wrong?). It was a little garlicky from the pesto but there was no big punch of flavor like I was expecting. The consistency of the sauce was nice and it was easy to make, so that's a plus. I will keep the recipe handy in case the kids ask for it again, but I'd probably only make it on a date night when it's just them eating. I can see the appeal, and it wasn't horrible, but it isn't something I'm pushed to make again or even feel compelled to tweak to get the flavors I want it. I'd give it an additional half star if I could.

Taqueria Style Tacos - Carne Asada

Followed the marinade as written and it was EXACTLY what I wanted to eat! Cooked the meat on the BBQ grill and served with fresh guacamole, fresh pico and a lime cilantro rice. Loved these so much, can't wait to make them again.

Lime Cilantro Rice

Great change from my usual Mexican rice (tomato and onion based). I left out the lime juice and salted the rice before I served it. Family gobbled it up with steak tacos. This one is a keeper!

Juicy Roasted Chicken

My new favorite for roast chicken, perfect every time and easy to boot. Great as a hot roast as well as torn up and used in other dishes as it lends a fresh flavor that isn't overpowering. Thanks Robin!

Stuffed Cabbage Rolls

I wanted something easy and 'new' for my family to try with the pound of ground beef I had on hand, and this was a hit. My 4 year old ate TWO of these! I used a bag of ready to serve spicy tomato soup in place of the condensed tomato soup (I had it on hand). After adding a bit of soup to the meat mixture, I poured the remainder of it over the rolls that I'd placed in an 8x10 baking dish. I covered the dish with foil and baked in a 200c (aprox 400f) oven for about an hour. They were nice for a change, I'll make them again.

Lemon Blueberry Drop Scones

Wonderful recipe! I did make a couple changes, one because of circumstance, one out of choice. First, I had to use vanilla yogurt. I am in Ireland and the store I shop in doesn't carry lemon yogurt all the time and this past week was one of those times. The scones were full of flavor so I don't think this hurt the recipe, they just weren't as lemony as they maybe should be. Second, I used lemon juice in lieu of the zest. I used the juice of half a lemon in the batter and the juice from the other half of the lemon in the glaze. And now that I think of it, I only eyeballed the sugar for the glaze based on the amount of lemon juice I had, and I added a small amount of melted butter to the glaze (that's a throw back to my g'ma's glaze recipe). Making more this afternoon for company. Thanks Jacqueline!

Chicken Enchilada Soup III

Our new favorite soup! I am in Ireland and could not get masa harina, so I crushed (pulverised) tortilla chips in it's place and left out the additional salt :) When the onions and garlic were browned I mixed the tortilla chip crumbs in to the pan, then I added the broth and remaining ingredients. Family loved it :)

Slow Cooker Buffalo Chicken Sandwiches

Love this simple recipe. I served it on toasted buns that I spread with ranch dressing I had smashed fresh blue cheese into, then topped it with creamy coleslaw and a drizzle of more Buffalo sauce. Fantastic! Next time I might toast the buns, top the bottom with the chicken, then add crumbled blue cheese and pop it under the broiler to melt the cheese. Then add a simple coleslaw and a drizzle of ranch.

Deviled Eggs

My favorite Deviled Egg recipe! I like them simple and creamy, and these fit the bill perfectly. Sometimes I'll add a sprinkle of dill instead of paprika. Good, old fashioned food that's gone in a flash.

Cheesy Nacho Bake

I had planned on making a big taco salad for dinner, but the moaning and eye rolling from the peanut gallery sent me here to allrecipies in search of something else to do with my ingredients. This Cheesy Nacho Bake was a hit with my hubby and kids (I liked it too). Of course I served it with a big salad and a side of corn, so in the end they ate everything that would have been in the salad but it wasn't all tossed together ;) It's nothing fancy or complicated, but I'll make it again when we need something quick.

Baked Macaroni and Cheese I

My kids loved it! Only gave it 4 stars because I tweaked the recipe a lot due to what I had on hand. I left out the bacon and onion (bummer). I used 2c cheddar and 1 c mozarella, and put fresh grated parmesan on top. I also added a little dry mustard and chili powder to the sauce. My kids gobbled up and have requested I make it all the time. Next time I'll add the bacon or maybe stir in some ricotta as I thought it was too dry (my own fault, I bet it's fine with the additional fat from the bacon and onion). Just a note to those that might find the sauce gritty: Pre-shredded cheese usually has flour or some other starch on it to keep it from clumping in the bag (that's what gives the cheese the dusty look). If using pre-shredded be sure to melt/stir the sauce long enough to not only melt the cheese but to fully blend that additional starch into the sauce.

Marinated Baked Pork Chops

Delicious! Doubled the sauce for 4 one inch thick chops, but left the oil at 2T. Covered it with foil for all but the last 20 minutes of cooking. I really thought this was going to be too tangy, too salty, too thin or too sweet but it was a balanced savory-sweet flavor everyone loved.
