Beer Braised Irish Stew and Colcannon

This was delicious!! I don't think the colcannon was enough for 8 people even though I added an extra big potato. I also doubled the onions and carrots, so it wasn't basically just meat and potatoes. I used Guinness. Great St. Patty's Day meal!

Buffalo Chicken Dip

Wow - this is delicious! Perfect for Super Bowl day... when all Americans are excused from thinking about calories, etc.... right? I replaced the Ranch with Marie's blue cheese dressing, and I used a rotisserie chicken instead of canned. I don't know how it tastes according to the recipe, but with these changes, it's pretty darn tasty! I'm serving it with celery and tortilla chips.

Banana Banana Bread

Great recipe. Moist, easy, and great banana flavor. There's a strong brown sugar flavor, so if you don't like it, then definitely pass on it. (I did add a bit of cinnamon as well.)

Fluffy Pancakes

These were great! I will probably reduce the sugar a bit in the future, but otherwise they worked out great! I also liked that we didn't get very many pancakes, as it was just the amount we needed.

Pumpkin Pecan Pie

This was just ok. I'd much prefer having either pecan or pumpkin pie. My sister and husband said it wasn't necessary to ever make again. At least it's very easy to make.

Chocolate Chip Cookie Dough Cheesecake

This was DELICIOUS! Followed directions exactly, although the sugar amounts listed in the ingredients seemed off. Could perhaps have cooked a few minutes longer. Had to bake the crust for longer too, but maybe it's just our oven. It was a great hit though, so thanks!

Really good and quick and easy! I'll definitely make these again. I agree that you end up with too much crumb topping, but not that big a deal. It fortunately doesn't affect the result at all!

Bacon-y Bok Choy

This was pretty good. Quick and easy to make, and a different way to eat bok choy (which is what I was looking for). I wish it had a bit more sauce, so I'll probably work on that next time. We ate it over rice, so sauce would have been nice for that. :)

Corn and Zucchini Melody

This was great! I had good cheddar at home, so I just grated that and used it. I also bought pepper bacon at the counter instead, and then just didn't add pepper when cooking. Everyone liked it! Thanks!

Chicken Enchiladas I

I feel it would be unfair to give this recipe only 4 stars, as it gave me the basics to create my own super dish (with help from reviews). I replaced the salsa with pico de gallo. I actually boiled the chicken with some lime, salt and pepper until it was almost fully cooked - thought it would be more tender that way. I then cubed the chicken. I used a Mexican four cheese combo. Also, I used a homemade green salsa that a friend had given me for the holidays. Also, I just layered tortillas on the bottom of the dish, put the filling on top, put tortillas on top, then the "enchilada" sauce and cheese. Enchilada pie! Easy and yummy! (oh, I replaced the green bell pepper with jalopenos - from a jar, and I only used 2 large chicken breasts and put it in a 9x11 dish.)

Yogurt-Marinated Salmon Fillets (Dahi Machhali Masaledar)

My husband and I really enjoyed this as it was such a different way to make salmon! The marinade really gets into the fish, and it makes a nice, spicy flavor. We served it with okra, onions and mushrooms that we sauteed with Indian spices, and then just had some raw veggies (tomatoes, cucumbers, and carrots) on the side. Yum!

Pumpkin Bread IV

I made two loaves and a batch of muffins. I replaced 1/2 a cup of the oil with apple sauce; I'll probably try 1/2 and 1/2 next time. It's a good recipe, although not quite pumpkin-y enough. I jused a 29 oz can and didn't measure based on what was written here. Next time, I will definitely add mini chocolate chips.

Sausage Smothered in Red Cabbage

I am VERY surprised by how much I liked this recipe. We only chose to make it because our CSA gave us red cabbage and we had to pick a recipe to make (not being big cabbage fans). Anyway, my husband and I thought it was delicious (although I liked it more than he did). Couple of adjustments based on what we had and one shopping mishap: linguica instead of kielbasa. Sauteed the linguica in butter, and then sauteed the onion in those pan drippings. Replaced lemon with fresh lime juice. Used balsamic wine vinegar + distilled vinegar in place of white wine vinegar (we were out). Also, added more vinegar (added to taste), and reduced the amount of salt.

Creamy Potato Leek Soup II

Very good recipe! We made some adjustments based on what we had at home... no bacon, but we had prosciutto, so we went with that. We sauteed the prosciutto in a bit of olive oil, as it doesn't have nearly as much fat as bacon. We also replaced the whole cream with a combo of 1% and half-and-half (didn't have enough half-and-half). Finally, I took an immersion blender in the end and pureed about 1/2 of it (including prosciutto). It was very nice that way... the flecks of red from the prosciutto were very pretty. I also added a bay leaf that I took out before blending. Next time, I would add a bit of spice - garlic, red pepper flakes, cayenne pepper or something. It's just missing a bit of a kick for me. However, it was still very good... especially with some nicely toasted bread!

Pan-Seared Chicken Breasts with Shallots

Came out great... chicken was fairly tender. I added 1/2 t of turmeric to the butter and olive oil to give the chicken a nice color and added a tiny bit of red pepper flakes to the shallots and garlic to give a touch of spice. Also added much more garlic. Served it with spiced cut okra (touch of cumin seeds, mustard seed, ground coriander, turmeric, salt and a little chili powder.) Also served with sauteed garlic with spinach.

Butter Flaky Pie Crust

Amazing Butternut Squash

yummy. my husband and I aren't big squash fans, so we were very happy to find that we liked this... I used a medium-large sized squash, doubled the amount of onion and added more cheese too. I also added almost twice as much sugar. ****ok, I made it again for Thanksgiving. I almost feel like the portions don't matter. I used 2 big and 1 small squash and didn't change any of the measurements except for doubling the sugar and it was still good! I added freshly grated nutmeg and cinnamon too. yum!
