I feel it would be unfair to give this recipe only 4 stars, as it gave me the basics to create my own super dish (with help from reviews). I replaced the salsa with pico de gallo. I actually boiled the chicken with some lime, salt and pepper until it was almost fully cooked - thought it would be more tender that way. I then cubed the chicken. I used a Mexican four cheese combo. Also, I used a homemade green salsa that a friend had given me for the holidays. Also, I just layered tortillas on the bottom of the dish, put the filling on top, put tortillas on top, then the "enchilada" sauce and cheese. Enchilada pie! Easy and yummy! (oh, I replaced the green bell pepper with jalopenos - from a jar, and I only used 2 large chicken breasts and put it in a 9x11 dish.)
