Salmon with Dill

Reviewed: Jan. 16, 2013
I enjoyed this and my family did too. I am on a very strict diet and this fits in it perfectly. I rated it 4 stars because I did not have to cook it nearly as long as the recipe states. It may be because, although I used 1 lb. of fish, it was 5 individual pieces which wouldn't take as long as 1 or 2 large pieces.

Hot Fudge Sauce

Reviewed: Jun. 21, 2012
This was a good sauce, but not as fudgey as I like. Next time I will use unsweetened chocolate instead of semi-sweet. Also, mine never did get smooth. Next time I will melt the chocolate first and then incorporate the milk.

Kickin' Collard Greens

These were fantastic. Even my kids ate all of theirs and they vowed they wouldn't like them. I didn't change anything.

Best Brownies

Reviewed: Jan. 30, 2012
These brownies are a new favorite in my house. I make cakes all the time, but had never made "from scratch" brownies. I don't like icing on my brownies, so I can't vouch for the icing, but just the plain brownies were awesome. I have made them twice, once with regular cocoa and once with dutch process. I liked the dutch process version better, but both were excellent. I also added walnuts to half of the batch. It's great with or without the nuts, but I personally prefer the nuts. My family prefers without nuts. I cooked mine for 27 minutes in a 9x13 pan (doubled recipe) and 26 minutes in an 8x8 pan (single recipe). Both batches were fudgey texture, not cakey.

Bread and Butter Pickles II

These are awesome! We eat them as a snack they're so good. I scaled down the recipe a bit, but it works just the same.

Fried Green Tomatoes

Reviewed: Jul. 30, 2011
These were very good and very easy. I gave it 4 starts because my husband made some changes. He added a pinch of chili powder and about a Tbs of cornmeal in the flour mixture. He also fried them in our deep fryer instead of pan frying in butter. He paired it with the following sauce from another site: Guthrie's Sauce 3/4 cup mayonnaise 1/4 cup ketchup 1 tsp black pepper 1/2 tsp garlic powder 1/4 tsp worcestershire sauce 1/4 tsp seasoned salt

Whole Wheat Pancakes

Reviewed: Jul. 23, 2011
These tasted great. My family loved them. I didn't tell the kids that they were different and they all ate seconds. I gave it four stars because the batter was very thin and the pancakes pretty flat. Next time I will use a ltlle less buttermilk and see if that helps.

Bob's Stuffed Banana Peppers

Reviewed: Jul. 20, 2011
I made this last night and it was really good. I used different sausage because my husband wanted me to use meat we already had in the freezer (he's a hunter), but the flavor of the sauce and the meats together were fantastic. I gave it 4 stars instead of 5 because there was way too much meat mixture for 8 banana peppers. I used 10 peppers fresh from our garden and they were huge, but I still had at least a quarter of the meat left over. I even split my peppers down the middle and made them boats so I could add extra meat and still had a ton left over. I ended up cooking it at the same time as the peppers in a loaf pan so we can have meatloaf tonight. :) Also, next time I will not boil the peppers first. They became a little mushy after cooking for an hour in the oven. I'm hoping that by not boiling them first they will remain a little firmer. I served with a salad and parmesan garlic bread.

Waffles I

Reviewed: Apr. 10, 2011
These waffles were perfect. My waffle iron is over 17 years old so it doesn't brown perfectly, but the waffles tasted great. They were crispy on the outside and fluffy on the inside. The only change I made was I doubled the vanilla because I like a lot of vanilla flavor. This will definitely be my waffle recipe from now on.

I didn't change anything and my okra turned out great. I have never tried to pickle anything before, but will definitely add okra to our garden next year and use this recipe again.

Super simple. I didn't change anything. My 7 year old and my 2 year old ate all that I gave them and asked for more. I'll definitely fix this again.

Marinated Flank Steak

Reviewed: Jun. 11, 2010
This marinade was awesome. I made it exactly as stated. I only marinated for 3-1/2 hours and my meat was very flavorful. Next time, instead of throwing away the marinade I will boil it and use it as a sauce to serve on the side. Everyone was sopping the juices off of the serving plate.

Reuben Sandwich I

Reviewed: Jan. 6, 2010
This was awesome, although I did as some other reviewers and heated my saurkraut in the microwave before grilling the assembled sandwich. I did not have any rye bread on hand, so I used a whole grain bread.

Juicy Roasted Chicken

Reviewed: Jan. 6, 2010
This was excellent and simple. I followed the directions with one exception. I used butter instead of margerine and put the butter slices under the skin. My husband wanted a sandwich with the leftovers for lunch today. This one is a keeper.

Sauteed Apples

Reviewed: Jul. 14, 2009
I was looking for a side dish instead of a dessert or pancakes topper, so I cut the brown sugar in half. I used Granny Smith apples and left the skin on (by accident) and it was really good. I only gave it 4 stars because I changed it slightly.
