Fresh Vegetable Stir-Fry with Peppery Orange Beef

I had some prepackaged stir-fry veges (peppers, onions, sugar snap peas, broccoli, carrots) and added some mushrooms. Otherwise I followed the meat/sauce exactly. This turned out great. Hubby didn't eat the veges (never does) but it was a great meal we could both enjoy. Look forward to the leftovers and I will be making this one again.

Baked Penne with Italian Sausage

This was tasty and easy. I also "doctored" up the sauce with some basil, oregano, crushed red pepper and dash of sugar. I also used whole grain penne to sneak some extra fiber in. This will be added to the rotation.

Peaches and Tequila Sunrise Sauce

Made this with pork tenderloin and it was yummy! Marinated for a few hours (could have been a little longer) but the boiled sauce on top is what really makes the flavor. I would be curious to try this with chicken as well, but it was great with pork tenderloin.

Baked Asparagus with Balsamic Butter Sauce

Good and easy. I love Basalmic so I also swapped the amounts of the soy sauce and vinegar. The neighbors enjoyed it as well. Easy and tasty side dish that will be added to the rotation.

Breaded Parmesan Chicken

I tweaked this a little, using garlic and herb bread crumbs, plus the cheese and curry. It was easy and quite tasty. We had some marinara to put on top, but it wasn't really necessary. The chicken alone with some linguine would have been fine. Quick and easy with ingredients I have on hand. This will be added to the rotation.

Stuffed Shells I

Easy and tasty. I made some adjustments for my picky husband's (and mine too) tastes. I used Ricotta instead of cottage cheese, added some garlic to the cheese mixture and some ground beef to the sauce. I used a jarred Arribata (spelling?) sauce which went well with it. It could have used more sauce we thought, maybe a jar and a half. Hubby requested that this be added to the regular rotation, always a sign of approval.

Soy Garlic Steak

Good and easy. My husband said dinner tonight was better than some he has paid for recently (made this and some roasted red potatoes). To make clean up even easier, I just used a large ziploc bag and opened it over an empty canister to pour things in more easily and then just closed it up and marinated for about 6 hours. This will be added to my regular rotation- super easy and tasty too.
