15-Minute Dinner Nachos Supreme

This was very yummy. I used a progresso tomato soup, because that was what I had on hand. I also used some leftover brown rice from a different meal, which absorbed all the liquid. I added black beans to it, and just used cumin, chili powder, garlic powder, onion powder and a little salt in place of the taco seasonings. It was a nice easy dinner. The kids liked it alot.

Cha Cha's White Chicken Chili

This was fabulous. I omitted the jalapenos and cayanne pepper (because I have small children and a heartburn prone husband), used 2 cans green chilis (pureed for my picky son), 1/2 teaspoon cumin, and black beans (because I was out of white). I left everything else the same. It was so yummy and even my bean hating husband liked it and said that I could make it again.

Ham and Cheese Crescent Roll-Ups

This was a great way to use the swiss chard from my garden. I added canned beans to extend it, because the swiss chard shrinks alot after it cooks. My kids liked it, and so I think it's a winner.

Best Bean Salad

This is delicious. I halved the recipe and made it for my family. The kids loved it. I had some zesty italian dressing I needed to use up and so I subbed that for the green pepper, celery, oil, vinegar, salt and pepper. I added slightly less sugar. Also, be sure to wash the beans, I didn't and there was unappealing bubbles in the salad. This would be a great dish to bring to a potluck.

Roasted Beets with Feta

I can't get over how differently delicious this recipe is. I kept snacking on the leftovers. It's fabulous. My husband didn't care for it. The kids liked it. It was a really nice presentation. I used onions instead of shallots and I sauteed them in some of the oil. I think that this would be a wonderful dish to take to a potluck. I tasted even better the next day cold.

Garlic Carrots

The kids loved this recipe. I used regular carrots cut up smaller. After I cooked the carrots, my sweet tooth took over and I had to make them sweet. So, I poured a little pancake syrup over them. It was wonderfully delicious!

Cherry Blast

Yummy! I had some cherries that needed to be used up. This was the perfect way. I also blended in some vanilla ice cream, and sprayed some whipped topping on top. Delicious.

Pepperoni Dip

Very good dip! The guests at my party devoured it. The next week my husband suggested using the same combination of ingredients to make a pasta sauce. I warmed and melted the ingredients in a frying pan. It was wonderful over noodles. LOVED IT!

Hot Bacon Dressing

Absolutely delicious! My kids (even my picky eater) all loved it. I want to put it on salad, pasta, sandwiches, etc. I didn't put in the pimentos, used regular mustard instead of dijon, used rice vinegar, and used xantham gum instead of cornstarch. I added an extra cup of water because I didn't want so much zing. It made alot of dressing.

Spinach Herb Twists

yummy! My picky children didn't care for it, but my husband and I thought it was delicious. I also put a completely different "twist" on this recipe and put butter and cinnamon on it instead of the spinach filling and made cinnamon twists. Delicious both ways

Poppy Seed Dressing II

Delicious! the perfect dressing. I did adjust the recipe a bit to make it easier and much more low fat. My version of this recipe has 3.5 grams of fat per serving, while the original has 14 grams of fat per serving. First of all I only used 1/4 cup oil, and I added 1 1/2 cups water. I added something called "xantham gum" it's a white powdery thickener that is often used in gluten free cooking. Commercial salad dressings use it to emulsify and thicken. You can buy it in the gluten free section of some grocery stores, or at a whole foods store. It's kindof expensive, but a little bit goes a long way. Also, instead of grating the onion and using the juice I just added 1/8 cup chopped onion. Blended everything except the poppy seeds in the blender until smooth and thick, then mixed in the poppy seeds at the end. Fabulous! Drizzled the dressing over spinach, almonds, mandarine oranges, and bacon!
