Oatmeal Chocolate Chip Cookies III

I was looking for an egg free cookie recipe, because of allergies. These were fantastic! I loved these cookies, very delicious!

Easy Toffee

Yum, yum, yum! This stuff is dangerously delicious. I could get fat having this stuff lying around! I modified this recipe in several ways. I melted the butter and brown sugar in the microwave and cooked it until it boiled after that I cooked it for about 2 1/2 minutes. I used ritz crackers instead of saltines. I cooked it for 10 minutes instead of 15, and then cooked for an additional minute after I put on the chocolate chips, to help them melt. I used heath bar bits instead of almond. I broke it into random sized pieces toffee. It was a hit at the party I went to, and was asked for the recipe. I will definitely make again for the next party I go to.

Butternut Squash Soup II

This was very delicious! I didn't have any celery or carrots on hand, so I didn't add those, but it was still very delicious. When I blended it I added some milk. Sprinkled cheese and lemon pepper on top. The kids loved it.

Russian Cabbage Borscht

Absolutely delicious! I omitted the tomato puree, because one of my kids doesn't like tomatoes. It was still wonderful! My youngest children didn't like it because it was red from the beets, but everyone else loved it. Very healthy. Very good.

Restaurant Style Beef and Broccoli

This was delicious. All my kids liked it, and even my picky child who doesn't like stir fries liked it. I made as written except I used water instead of sherry, and I added a spoonful of hoisin sauce. I also used ground beef instead of steak and didn't marinate it, I just added the sauce while I was browning the beef. I found that this made enough for me and 6 young kids. We served it over rice.

Golden Yam Brownies

Absolutely wonderful!!!! I actually had a funny experience. I made this recipe and was surprised at how totally greasy and sickeningly oily it was. Then I realized that I had accidentally doubled the butter, oops! I tried making it again a few days later and was pleasantly surprised that it was as good as everyone said. I also added 1 teaspoon of Siagon Cinnamon (a spicy cinnamon that tastes like red hot candies. It's available at Costco). They were sooooooo gooooooood! I also used a large can of yams instead of shredding them. My daughter who despises sweet potatoes, loved these (of course I didn't tell her that there were sweet potatoes/yams in them - hehe).

Spinach Pasta Salad

My kids loved it. I used wishbone's balsamic vinaigrette. I added pepperoni. I think that next time I will make 2 batches, one without onions and olives, because some of my kids didn't like them, and one with all the good stuff. Other than that it was very very good. My 10 year old said that the feta cheese was what made it really good. My 12 year old can't stop eating it!

Chocolate Chex® Caramel Crunch

Delicious and easy! I didn't have chocolate chex, so I used regular rice chex and popcorn. I added in some coconut. Didn't have any vanilla baking chips, but it was still so yummy. I also use this as a super simple carmel corn recipe with popcorn alone. So easy and delicious

Whole Wheat, Oatmeal, and Banana Pancakes

This was delicious. My kids said that these were very moist and fluffy like restaurant pancakes. I used only whole wheat flour, none of the white and I added 2 teaspoons flax seed meal. I subbed applesauce for the banana. I didn't add any sugar, because my kids always douse them with pancake syrup. I used half milk and half water, and omitted the dry milk. I added a teaspoon of lemon juice to help the baking soda. And I tripled the batch so that i could freeze some for us to eat later on in the week. I will definitely make again.

Banana Crumb Muffins

These are one of the best muffins I have ever made! They were moist and light and fluffy, and the topping was delicious. I added a teaspoon of lemon juice to help out the baking soda a little. I used whole wheat flour instead of white. I subbed 1/3 cup oil for the butter. My kids gobbled these up!

French Toast Casserole

Very yummy. I will probably make this at least twice a month. It was a great way to use up leftover bread. I used whole wheat homemade bread cut into 1.5"x1.5" cubes. I spread a double recipe out on a big sheet pan, and I'm really glad that I did, because the best part of this recipe is the crispy top. It was also nice and puffed kind of like a pastry. I think if it was thicker and in a smaller pan it would be soggy in the middle. I baked it at 400 degrees. I sprinkled powdered sugar on the top when it was done. It was very delicious. Yes, it isn't extremely sweet or flavorful, but with syrup it's just the right amount of sweetness. My family said to make it again.

Chicken Enchiladas II

When this dish is made the way it is written it is the best chicken enchiladas ever. I think it has to do with sauteeing the green onions in butter. Yummy!
