Amish Breakfast Casserole

I modified this a bit because I didn't have several things on hand. I used sandwich honey ham diced instead of bacon, potatoes o'brien instead of hash browns and onions, 5 eggs because I was out, 1 1/2 cups sour cream instead of cottage cheese (which I regret. I know the cottage cheese will be much healthier) , and 3/4 c cream cheese instead of swiss. I added a can of rinsed and drained black beans too. It was good this way--I am certain because of the results that it when I cook it as written, it will be very very good (and healthier than my version), but I will still add black beans.

Easy Black Bean Soup

This is a good recipe with some changes. I pureed everything after step 1, before adding some whole black beans. It would be very good pureed with no whole black beans. I did not like the lemon juice addition, and am glad I forgot it and only tried a splash in one of the bowls. I had a fluke with one (my last) can of black beans, and had to use a can of regular refried beans. It still tastes wonderful. Good recipe, thank you. Very hearty and heartwarming. Very good taste combination.

Lentil Soup

Very good; I used 2 c diced potatoes instead of the canned tomatoes and forgot the vinegar at the end. I'm sure it would be good with the vinegar. I second the recommendation to add cumin (I added 1/2 t) and to use soup stock (I used chicken) instead of plain water. Some recommend doubling the spices, but I would only increase them by 50% or not double them. This is a great recipe once tweaked slightly--thanks:)

Indian Sweet Bread

Pretty good. I substituted the white flour for wheat flour cup for cup. I liked it best with a truly light sprinkling of sugar--just enough to complement the salt and nutty wheat while keeping it from being a dessert. This went great with Lentil Soup (http://allrecipes.com/Recipe/Lentil-Soup/Detail.aspx) Thanks!

Oatmeal Raisin Cookies IV

These are the best oatmeal raisin cookies I've ever had. The soaking really must make a difference with the raisins. I made a few changes: added 1/2 t additional cinnamon; no white or brown sugar, just 1 1/2 c evaporated cane juice + 2 T molasses; added 1/4 t salt; omitted pecans because of allergy. Fantastic. Still a little sweet for my personal taste, I'll reduce the sugar next time, but wonderful still.

Apple Oatmeal Cookies II

Thank you, I have been looking for a recipe like this; all-natural sweeteners, all food ingredients, something I can eat when hungry without feeling guilty or ill. I made a couple changes: I creamed 2/3 c applesauce in with the wet ingredients in place of the chopped apple to save work. I also used 1 c rolled oats and 1/2 c quick oats instead of all quick oats. I also used real butter in place of margarine. These are VERY good and are quickly becoming my lunch. I'm going to bake a ton of them and put them in the freezer for quick snacks and breakfasts. P.S. The cookies are very moist when made with 2/3 c applesauce and might fall apart easily when being removed from the cookie sheet. I used parchment paper underneath the cookies in place of greasing the sheets, so I didn't have this problem. I just slid the paper off the cookie sheets on to the counter to cool after allowing them to cool on the sheets for five minutes. They are a hold-in-the-hand cookie instead of a hold-by-the-edge cookie.

Japanese Onion Soup

This approximated Benihana's onion soup, but didn't quite make it. Still good, though! I made mine in a pressure cooker by reducing the liquid to 5 cups (I should have done 4 cups) and adding all other ingredients as listed, except for chopped shiitakes. I just got some white sliced mushrooms from the produce section without checking their type, and poured the broth over those with some sliced green onions and french fried onions. Thanks for the recipe.

Sweet Pepper Pasta Toss with Kale

This was fantastic. I used green instead of yellow peppers (for cost) and wide egg noodles instead of farfalle, since that's what I had on hand. It was a very good, very satisfying mediterranean (?) type dish that I love. I might cut back on the feta just a little.

Easy Vegetable Soup I

This was great with a few personal changes. I did not add the tomatoes with green chiles, and since I used Libby's brand mixed veggies I didn't have to add potatoes. Easy! And I liked it best when it had only been heated through just to temperature. The flavor of the V8 was retained better that way. Thank you for a great idea. This was very good.

Zucchini Mediterranean Style
