Spanish Cod

Very good; very flavorful. I will try shrimp or scallops next time. I cut the cod into little chunks, then served over rice, with foccacia bread -- a nice meal on this Friday night. I could not find the marinated vegetables called for, so I used an equal amount of marinated artichoke hearts. Thanks!

Black Russian Cake I

Very good cake, and I will definitely make it again. I will try the "crunchy" glaze from another review. ALSO, I may cook it a bit longer; mine was right on the line between moist and under-cooked. OH, and I used one 3.9 oz. package of instant pudding mix, NOT 5.9 oz as called for b/c that's all I could find (and I didn't want to buy 2 and do the measurement). Thanks for the recipe!

Potato and Bean Enchiladas

Just moved to Vermont from Texas and these were just what I was looking for: not too hard to put together, vegetarian, very good. I up-ed the spice a bit with some chile pequin flakes, though.

Chocolate Dipped Orange Biscotti

Not bad. Though, a warning: if you're planning on doubling (or tripling) this recipe, you'll need to add more flour -- until the dough becomes easy to handle. I didn't have almonds, used white chocolate chunks. Very orange-y.

Cheesy Potato and Corn Chowder

We more used this recipe as a jumping-off point for improvisational cooking, and it turned out great! We used vegetarian brown gravy mix, shredded cheddar and monterray jack cheeses and an extra can of corn like someone else suggested. Our guests all asked for the recipe. It went very well with fresh-baked honey wheat bread, too.

Scalloped Sweet Potatoes and Apples

I used more apples than called for (ginger-gold worked well for me), and I added some shortening, flour and cinnamon to the brown sugar when it came to the topping. I laid it on pretty thick on top and even threw in a few chopped pecans for good measure. Mmmm.

Shrimp Pad Thai

I liked this recipe a lot, and the only reason I didn't give it 5 stars is that it wasn't the very best I've had. But it is easy, versatile and forgiving: I had to use canned bean sprouts, and only had balsamic vinegar on hand -- still, it turned out well. Like other reviewers, I followed the noodle package directions. Next time, I will add pepper flakes for a bit of spice, and might prepare a peanut sauce to drizzle on top. This went very well with fresh-cooked green beans on the side, prepared with butter and dry-roast peanuts.

African Curry

This was super-easy to make, though it tasted like it took more time and energy than it did. I added more curry and red pepper since we like the spice, and we made it with crab; it turned out great. This will surely become a regular of mine. Thnx.

Barley and Mushrooms with Beans

I added salt to this, as I thought it was a little bland. I appreciated how easy it was to make such a healthy dish, though. And it was very easy to double the recipe and freeze half for another time.

Spinach Chickpea Curry

I was out of rice, so served this with quinoa instead, and it turned out great. Next time, I will better drain (maybe even press) the tofu. Great, healthy meal.
