Stuffed Cabbage Rolls

This is a quick week night meal for the two of us. I'm not fond of tomato soup from the can so the only thing I change is to a small can of tomato sauce and a can of petite diced. It's so awesome!! Thank you for sharing, Judy.

Linguine with Chicken and Sauteed Vegetables

This really is a delicious dish. I'm only cooking for two now so we usually have some sort of stir fry at least once a week. It's fun to experiment with various veggies or even some good wine, which I add after I saute the chicken and reduce. I scale down the recipe using only one large chicken breast, thinly sliced (freeze for 10 min. for easier slicing), the veggies here plus pea pods, fresh mushrooms, thinly sliced celery, and Japanese rice noodles. We had enough for dinner and two lunches, however, my husband decided to have a second plate. This is a great recipe to use up the remaining produce in the refrigerator before a grocery shopping trip. Thanks for sharing, Josie.

Easy Chicken Enchiladas

This recipe was delicious for Cinqo de Mayo! Not too fussy either. I had my husband grill the chicken after I seasoned it, which also gave it some extra flavor. Overall, great! Thank you!

Smoked Paprika Vinaigrette

Wow, delish! I used the exact ingredients in my food processor and it turned out amazing! I used baby romaine lettuce and a variety of veggies, with red onion slices, tomatoes, etc. Mixed it all together with the dressing in a large serving bowl. Then we added sunflower seeds and dried cranberries. We're making it again Saturday night when the relatives visit. My husband isn't a big fan of vinaigrettes but he said this is by far the best dressing he's ever had. Told me to make a large batch and keep in frig. Thank you DC!!

Homemade Chicken Parmigiana

This turns out to be a definite keeper. I didn't have heavy cream but it worked fine with half and half. My husband asked me to keep this one and make it again. He's not usually big on heavy tomato sauces so this was perfect! Thank you for sharing.

Irish Cream Bundt Cake

Yum! Try this with a little bit of ice cream when it's warm. It's so good! Brought this to a potluck at work and sliced it in small slices, which held together fine. It was definitely a hit! Thank you.

Cha Cha's White Chicken Chili

This is phenominal! I make this a lot. Lately, I made it for a potluck at work. I made what I thought was way too much, however, there was nothing left! I always serve green onions, chives, sour cream and white corn chips on the side for toppings, if desired. Also, you can adjust the "heat" if someone likes or doesn't like the spiciness. Thanks! ps. Last fall, at my new job, I won a chili cookoff with this recipe. Thanks again!

Chicken Bake and Rice

Last night I made this for the first time and was extremely pleased. My husband loved it, too. I used 6 chicken breasts and there was plenty of extra sauce. I made it with a white and wild rice mix and steamed broccoli. We each had plenty for our lunches today, too. My best friend and I share recipes all the time, so I can't wait to share it with her.
