Chocolate Swirl Zucchini Sheet Cake
This cake turned out perfectly with a few changes to the directions. After reading the reviews, I used a sheet cake pan plus an 8X8 square pan because I did not want the cake overflowing in my oven. I did substitute 1/2 C of applesauce for 1/2 C of the oil and decreased the sugar by 1/2 cup. Also I added 1 tsp of almond extract to the cream cheese mixture while beating it. It took about 40 minutes baking time in glass pans before both cakes were done. Next time I make this recipe I will try it with egg replacement since one family member is allergic to eggs.

Applesauce Wheat Blueberry Muffins
This recipe was great with the following changes: I increased the applesauce to 1 Cup after reading others reviews and used a full cup of frozen blueberries. I always mix the blueberries with the dry ingredients first so they do not clump together and then add the liquid ingredients. The batter is thick so make sure to mix well before putting in muffin cups. The result was 12 delicious, healthy and moist muffins. Thanks for the recipe!

Layered Eggplant Hamburger Casserole
This recipe is a winner! It was received with applause by my family. Leftovers delicious warmed in microwave. I substituted ground turkey for the hamburg(as I usually do in recipes). The next time I make it I will drizzle a little olive oil over each layer as I put it together. Thanks for sharing your recipe.
