Light, Crisp Waffles

Oh my goodness this is the recipe I have been looking for. I've been trying different recipes since I got my waffle maker a year ago and this is definitely the one I'll be making from now on. It takes a little more prep time than the other dump and stir recipes, but it's worth it. I didn't follow the recipes exactly - I changed servings to 8 so that made the eggs 1 1/3 or something, and I just used two eggs, plus I eyeballed a couple other quantites, and it didn't matter. I also had a two-year old at my feet yelling "waffles, waffles!" so I didn't waitt he full time for the eggs to be whipped, but they were light. Fantastic! Easy recipe with great results. Just dip them in syrup instead of covering them and they stay crispy a little longer.

Chocolate Mint Candies Cookies

Very, very good! It was hard to tell when they were done because they stay SOOO poofey and soft while in the oven, but as long as I took them out after 10 minutes regardless of what they looked like, they were still nice and chewy. The first batch was crunchy. I also turned my oven down to 325 after the first batch, but I just think my oven is goofy. I used the Andes baking ships, which are crushed andes mints, and I think it resulted in a prettier product than the whole mints. I used a 10oz bag for the whole batch. I put half the batch in the freezer for gift trays for Christmas, so lets home a few weeks in the freezer doesn't ruin their flavor and texture. I'll definitely be making these again, probably in a few weeks!! I might try to find a chocolate cookie recipe that uses cocoa powder though for a more economical cookie since the mints are pricey.

Chocolate Banana Bread

Yummmm...only marginally healthier than chocolate cake, but it's so good! I added a few more chocolate chips and a littie more cocoa. Also, I halved the recipes but it still make 21 muffins. It's a keeper!

Basic Cream Cheese Frosting

Black Bottom Cupcakes I

Mmmmm......so good. I made them in cupcake liners, a springform pan, and a 9x13 pan, and each time it came out deliciously. Didn't change a thing. So good!

Amish Sugar Cakes

This is very similar to a recipe my family has been using since before I was born! Use a tsp instead of a tbsp of baking soda, omit the cream of tarter, and replace the shortening with butter, and you will have the most delicious and dreamy sugar cookie ever!

Bread Machine Rolls

Super yummy! We try to eat mostly whole grain bread, but I decided to make these for a turkey dinner, and they were so good! I sprinkled them with sesame seeds before baking. I was rushed and got a late start, so I didn't have much time to let them rise the second time and they were still great.

Banana Banana Bread

SO yummy! I added about 1/2 c walnuts the second time around, and this time, the third time, I experimenting with raisins. I think I might try coconut, too. Thanks for an awesome recipe!

Cream Cheese Frosting II

It was thick and very, very rich. I'm not sure why other reviewers had runny frosting, but mine was not at all runny. A bit too cream-cheesey for my taste. I am going to add more sugar next time. I also added a half-teaspoon of lemon and it was a nice touch. I used it on cinnamon rolls.

Angel's Chunky Chicken Salad

Super Duper Zucchini Muffins

Super yummy! I took the advice of pervious posters and doubled the milk and cinnamon, and added a little extra nutmeg. I also used a little more walnuts than called for, and added a handful of raisins. I used naturally sour raw milk rather than milk and vinegar, and also used a stick of softened butter rather than shortening. So good! I will make these again for sure!

Best Big, Fat, Chewy Chocolate Chip Cookie

Yum. The extra brown sugar gives these cookies a nice toffee like flavor. I made smaller ones, and they were great. I've never had a cookie brown so evenly in all my life! I don't know if it's the recipe or the parchment paper. I will make these again for sure!

Classic Whole Wheat Bread

This bread was very good. I made 16 rolls instead of a loaf and it was great. My only complaint was that it was a little bland. I'm going to add some honey next time, and maybe top with some seeds. The texture was wonderful - light and fluffy. Bake for only about 10 minutes for rolls.

Mouse's Macaroni and Cheese

This mac and cheese was great! I look the advice of some other reviews and decided the amount of cheese was a bit too much. But rather than use more macaroni, I just halved the cheese but used the same amount of milk and butter. It was so good! I made it again with 4oz cheddar and 4oz american, and it was even better. I also used whole milk since the recipe didn't specify. If you like your mac and cheese really creamy, just don't bake it. I tasted it before putting it in the pan to bake and it was yummy then, too (but I think it's better baked).

Best Cheesecake on Earth

I made this cheesecake a few days ago, and I just wasn't very impressed. It was good, but I guess I was expecting more since it got so many great reviews. I followed the recipe exactly, except I had to make a smaller cheesecake as well since it made so much batter. I used an 8” springform rather than a 10” since I don’t have one, but I had enough batter left over for a two 5” springform pans as well. The cheesecake was a bit grainy, even though I beat it thoroughly; the batter was quite creamy looking when I put it in the pan. I also thought it needed to be sweeter. Topping to with strawberries and strawberry sauce helped, but by itself it would have been too bland. It also cooked up very dark and cracked halfway through baking, but that may be due to the smaller pan size. I probably won’t use this recipe again, or if I do, I’ll add more sugar and probably leave out the ricotta, or just use a lot less.
